You’ve heard it from Bill Clinton himself first. Now, the doctors behind his motivation for following almost a completely vegan diet are talking to CNN’s Wolf Blitzer on how more people should adopt the plan that can prevent and reverse heart disease.

Dr. Dean Ornish has been Clinton’s physician consultant since 1993 and Dr. Caldwell Esselstyn is the author of Prevent and Reverse Heart Disease and the father of the Texas firefighter Rip Esselstyn who authored The Engine 2 Diet and convinced his fellow firemen at the station to eat veg to improve their health.

Dr. Esselstyn says, “When you do what President Clinton has done, when you completely try to remove any foods that are going to injure your vessel, the body has this remarkable capacity to begin to heal itself. And I’m afraid that as a medical profession we perhaps have fallen down and really emphasized too much the drugs and the procedures and the operations which really treat the symptoms. They do not treat the causes of these illnesses.”

The causes of these illnesses, Esselstyn insists, in continuing to eat “anything with a mother, anything with face.”

Katherine Heigl has pledged to donate $1 million dollars to spay and neuter programs in Los Angeles.

The “Life As We Know It” actress kicked off an initiative in collaboration with the Jason Debus Heigl Foundation called “The Compassion Revolution,” which aims to reduce the number of animals in LA area shelters.

If compassion for animals does not appeal to some, the costs of such a tragedy should be enough to make even the biggest cynic turn their head. According to The Hollywood Reporter, each year, 500,000 animals are sheltered and euthanized in California, which costs the state $250 million dollars. Heigl has emphasized to the media that many people are completely unaware of these numbers, as well as the statistics on how easily animals that aren’t fixed can multiply.

“They have no idea that a litter of 10 means a litter of, like, 400 in the future,” Heigl said. “We can tell them and educate them, and provide a way for them to spay and neuter their pets.”

"The Food Matters Cookbook" Mark Bittman

Mark Bittman‘s latest book, The Food Matters Cookbook, is filled with recipes designed for the flexitarian or those looking to consume less meat. Bittman gave an interview to the Pittsburgh Post Gazette where the topic of a study indicating Americans aren’t getting enough fruits and vegetables came up.

Bittman insists that most people would reduce meat intake if they had the resources, whether that’d be through enticing recipes, food stores or money, but questioned the reality that everyone could become vegetarian or vegan.

“Just about every study and survey show that people want to eat more fruits and vegetables and are aware of the benefits of eating less meat. They just don’t know how to do it,” Bittman said.

“A conservative estimate is that 80 percent of what we eat should come from unprocessed plants, which is such a big turnaround that we won’t be able to achieve it in our lifetimes. To say everyone needs to be a vegan is a nice idea, but that’s kind of like saying everyone should ride a bicycle. It’s simply not going to happen. The challenge then is, how do we move in that direction of eating less of A and more of B?”
