Kathy Freston Celebrates Her New Book 'Quantum Wellness'

If you’re a vegetarian and animal activist, you’ve come a long way, and author Kathy Freston wants everyone to know!

With measures like Prop 2 passed in California to restaurants offering more than the salad bar and cheese sandwiches, you know the days of being offered chicken after saying you’re vegetarian will soon end.

And when big time names like Martha Stewart and Alicia Silverstone hit the news with their thoughts and opinions, people turn around and listen.

From Kathy’s article at the Huffington Post on several vegetarian authors who spent weeks on the New York Times Bestseller list:

“For some weeks now, Chef Tal Ronnen’s Conscious Cook and actress Alicia Silverstone’s Kind Diet have joined Foer and former model agent Rory Freedman (whose book convinced home run slugger Prince Fielder to adopt a vegan diet) on the list with books that make the case for vegetarian eating. You may recall Ronnen from his appearances on Oprah, which caused Oprah to exclaim, “Wow, wow, wow! I never imagined meatless meals could be so satisfying.”

And who would have thought the Domestic Diva would feature a segment on vegetarian food for Thanksgiving?

Obama discussing factory farming and Al Gore finally admitting environmentalists need to eat tofu while driving their Priuses are just a few of the advancements Freston discusses at huffingtonpost.com.

HLN anchor and journalist Jane Velez-Mitchell says she’s not opposed to dating a non vegan woman–if the woman was serious about getting her veggie act together!

“If they were on the way [to veganism]!” Jane said, according to The Scavenger. “One of the great things of meeting new people is to be able to expose them to an alternative way of living.”

But watch out, any woman who expects to date the vegan queen on CNN–remember what PETA’s president said about dating non vegetarians and dumping them once they come to the other side?

A few other highlights from the interview:

On how others react to her vegan diet and lifestyle:
People are curious. I don’t bring it up as much as people bring it up with me. So I’ll be in the makeup room and something will come up and the conversation will turn to me being vegan. It’s a radically different world in terms of how people view veganism even from five years ago. It’s much more mainstream and accepted.

On what prompted her to go vegan:
I’d always had compassion for animals but never really followed through. I was this sort of vegetarian that ate shellfish. Then I met Howard Lyman, the author of Mad Cowboy who was on Oprah. I did an interview with him and he asked if I ate dairy and I said yes and he called it ‘liquid meat’. From then on I went vegan in that moment and have never looked back. It radically transformed my health – the colds I had every year went and my energy levels went up.

“If I eat too much before a show, I just want to sit down. Too little, and I’m starving. So I eat something small, like Quorn, a tasty meat-free protein, and green beans.”

Carrie has lent her support to the Humane Society in the past and doesn’t spare words when it comes to people who don’t care and look after animals.

“I hate it when people don’t take care of their pets. It’s important to spay or neuter them.”

Will Carrie be the next vegetarian celebrity to replace Bob Barker and be the public face for controlling the pet population?

Dictator Dennis Kucinich–“Everyone Eats Vegan Brownies”

Representative Dennis Kucinich completed an interview with reddit.com and gave a deliciously surprising answer when asked, “What would you do if you could be dictator of the United States for a day?”

“Well, I think I would order everyone to have vegan chocolate chip brownies,” Kucinich said.

Ah, the torture!

Kucinich and his wife Elizabeth are both vegans, and constantly voice their support for the lifestyle, including lobbying for vegetarian lunches in schools.

Where were the Kucinichs’ when you were forced to eat cardboard sandwiches at lunch?

“I’ve been a vegan since 1995, and as a result I’ve had great health, tremendous energy, and mental clarity … I had Crohn’s disease as a kid, and a pretty severe case of it, but when I changed my diet my symptoms began to disappear.”

Alanis Morissette has confessed to some serious kale addiction.

Maybe she and Kristen Bell should get together more often.

The singer who calls herself “90% vegan” said, “I eat kale salad. I put kale in my smoothies, kale in my soup. Kale, kale, kale! I feel like Popeye. I love it. I definitely need variety or I get super bored, so I have to mix it up with different sauces and tahini or whatever.”

That explains why one of her most recent parties was hooking up with vegetarian author Anna Thomas and digging her fingers through the fresh vegetable.

Alanis is currently training for the Biz Johnson marathon, which she says isn’t hurt at all by her vegan friendly diet.

“I think veganism is really well suited for training, at least for me anyway.”

Alanis is featured in the January 2010 issue of Runner’s World.
