Jessica Chastain has been eating vegetarian for almost two decades, so when it was time to film a scene on The Help where her character ate fried chicken, the producers had to make a few modifications.

Not a big problem at all, considering all the realistic faux meats that are available.

Roberto Martin, Ellen DeGeneres‘ personal chef and the man that’s enticed viewers of her show with tasty meatless dishes like Thanksgiving Seitan Roast, Spring Rolls and Vegan Tacos, has published a cookbook with a title that suggests he’s out to convert a few hamburger lovers.

Vegan Cooking for Carnivores promises “125 recipes so tasty you won’t miss the meat,” but offers much more than lists of ingredients.

The Inspired Vegan

“So often, I think that the stories that are told are from young, privileged white kids. Part of my goal is to shed light on other communities that haven’t had much of a voice. To just say that fixing food is going to help resolve issues in these communities — it’s not looking at the bigger picture. If we do have access to healthful foods, that would address a lot of other issues.”

Bryant Terry, during an interview promoting his latest cookbook, The Inspired Vegan. With evocative chapter titles such as “Freedom Fare,” “Detroit Harvest,” and “Winter in Hong Kong,” The Inspired Vegan is a collection of Terry’s cooking instructions for his favorite fruits, vegetables and grains combined with stories that highlight issues of food justice.

Below is a clip of Terry reading a passage from The Inspired Vegan, “Farm Fresh,” a chapter dedicated to those working hard to keep our food supply stable, despite financial, weather or political setbacks. “Farm Fresh” contains mouthwatering recipes such as Coconut Quinoa and Smokey Tomatoes, Roasted Plaintains and Crumbled Tempeh, so the video is definitely worth taking a listen to–before heading out tonight to purchase the book.

Former mayor of Chicago Richard M. Daley took a trip to China to enjoy some time off and some good food. Did we mention he’s sporting a sexier look due to the vegetarian diet he adopted there?

Richard’s brother Bill Daley told the Chicago Sun-Times, “He has lost some weight. He went to China for two weeks, got on a vegetarian diet — that’s what you eat when you’re there.”

Burger King Going 100% Cage Free

Burger King has once again taken a step to provide more ethical, humanely produced food.

The fast food giant that claimed to be the first to sell a vegetarian burger nationwide has committed to sourcing 100% of its eggs from cage-free suppliers and purchasing pork from suppliers that have pledged to phase out gestation crates for pigs.

Jacques Pepin

Of all the celebrity chefs who’ve warmed up to the plant-based lifestyle, Jacques Pepin is still not one of them.

The master of French cuisine recently spoke with Bay Area Bites when he touched on the subject of California’s foie gras ban that goes into effect July 2012 and Paula Deen‘s grease fest southern cooking.

“They have no idea what they are talking about. And the worst is that they are righteous,” Jacques said of officials who created a ban that makes it illegal to “force-feed a bird with the intent of enlarging the animal’s liver “beyond normal size” or to “hire a third party to do so” and suggested similar measures to improve animal welfare standards like those in chicken slaughter were also ridiculous.
