Plant-based proponent and Chicago mayor Emauel Rahm is promoting a vegetarian diet for the city’s firefighters and residents.

Chicago’s South Side Engine 18 station recently held a meatless celebration featuring Rip Esselstyn, author of The Engine 2 Diet who helped firemen at his station in Texas adopt a plant-based diet on the job.

Rahm encourages such a change and thinks it could cut health care costs in the future.

The Chew

The Chew celebrated Meatless Monday today and Daphne Oz, Mario Batali, Clinton Kelly and Carla Hall showcased their favorite vegetarian recipes.

Instead of sharing one great recipe of the day, why not attempt to make all of these?

Daphne and Clinton both have veggie burgers recipes that will leave no one missing the ground beef. Clinton even has a recipe for real, old-fashioned fried onion rings you can place on top of either meatless patty.

As previously reported, the 26-year old graphic designers is also a vegan food blogger and Vegetarian Star has recently stumbled upon her blog at Seattleite where it appears she covers the Meatless Monday beat.

Giudici reviews restaurants and stores in the Seattle area that serve the best in plant-based fare and has covered everything from fine dining to pastry shops to sports arenas.

Several high profile companies have offered their suggestions for making 2013 the healthiest year ever by giving examples of how they feed their employees.

SkullCandy, Chegg, Daily Candy and Twitter are three companies that shared with Entrepreneur how an employee who made getting fit a resolution this year may be helped by what’s in the company fridge.

SkullCandy offers vegetarian options like hummus that leave workers a little less hungry while testing out the latest headphones.

Lawson went vegetarian in 2011 and after a few months cut out dairy and all other animal products.

She and her husband work as a team–he often does meal planning and preparation while she scouts out all the natural foods stores and shops in the area.

Dave Letterman‘s warm up comedian Eddie Brill was once a 400 pound, two packs of cigarettes a day smoker facing a multitude of health problems.

He’s since lost over 100 pounds and become a vegan, proving the funny man doesn’t have to be fat, as he hosted a comedy show at NYC’s Gotham Comedy Club, “Laughter and Food is the Best Medicine.”
