Although she was once awarded the title for one of the worst cookbooks for health from the Physicians Committee for Responsible Medicine, Trisha Yearwood has come a long way since her less healthy days of Home Cooking.

Her latest cookbook, Trisha’s Table, not only exemplifies what she calls the “80/20” rule of good/indulgence eating, it has several plant-based recipes she couldn’t resist sharing.

“I can’t imagine life now without options that helped me maintain my goals, like Tofu Ricotta Lasagna or Chickenless Pot Pie, a plant-based pie that my mama created herself while battling breast cancer,” Yearwood writes in Trisha’s Table.

Veg-friendly country music fans will also want to try her vegetarian Smashed Sweet Pea Burgers.

And watch out gourmet vegan chefs–Trisha has created a dairy-free version of Tomato Bisque Soup using cashew cream.

Yearwood admits she’s still in the learning process of how to make healthier dishes. especially those that keep the tradition of Southern cuisine.

After listening to experts and family members, she’s been able to narrow down the formula to better health as one that contains the “common denominator” to “eat more fruits and vegetables.”
