Gwyneth Paltrow has written a new cookbook, It’s All Good: Delicious, Easy Recipes That Will Make You Look Good and Feel Great.

The inspiration for the collection of recipes stems from a recent bout of fatigue and other symptoms the actress experienced. A visit to a doctor left her with a prescription of with several food restrictions, including meat and dairy.

The Bachelor Sean Lowe snagged himself a great little vegan gal on season 17 of the reality dating TV series.

Catherine Giudici is a 26-year old graphic designer at Amazon.com by day and a vegan food blogger by night.

Lowe chose Giudici over a group of other (probably not vegan and not nearly as cool) women.

According to Wetpaint, Giudici took the vegan plunge after a trip to Kenya.

The R & B singer sent out a series of Tweets announcing his new diet, his motivations for it and if anyone could give him lessons on feeding himself!

“What’s everybody’s New Year’s resolution?” was the first message he sent. “I’m gonna try to go Vegan. Discipline test. NOT looking forward to it. Wish me luck!!”

Anderson Cooper invited actor Alan Cumming to his studios of Anderson Cooper Live to discuss New Year’s Resolutions and Cumming’s charities.

Cooper, Cumming and co-host Jill Martin enjoyed a plate of faux chicken tenders during the segment.

Cooper expressed that he would like to become a vegan, but thought the switch would be too hard as he’s used to eating the same dish (presumably meat dish) daily.

Meredith Vieira Almond Milk New Year’s Resolution

Meredith Vieira and several other celebrities’ New Year’s resolutions are posted at Vegan Resolutions.

Vieira would like to give up dairy–at least in her morning cup of joe.

“I vow to use almond milk instead of milk in my coffee,” the journalist and NBC correspondent said.

That’s quite an upgrade from her old breakfasts of “cigarettes and cola,” as she explained on Today.

“When I was a smoker, I started every day with a Tab and a cigarette,” Vieira said.

2012 saw a lot of awesome vegetarians, vegans and plant-loving people make headlines.

Here are a few of Vegetarian Star’s favorite.

#5. Vegetarian Olympics.
The 2012 London games made America proud with plant-based eaters like Mary Whipple and Dotsie Bausch who shared their medal-winning veggie meals with the media. And UK based Fry’s fed fans and athletes with their delicious meatless items like vegetarian mince meat. Go team VEG!

#4. Vegetarian journalist Candy Crowley moderates presidential debate.
The first female to do so in 20 years. Maybe the first vegetarian ever.

#3. Hell’s Kitchen competitor opens vegetarian sushi restaurant.
Reality TV isn’t always nice to vegetarians, but reality business may be as Guy Vaknin‘s Beyond Sushi shows what you can do with a roll of seaweed beyond Flipper.

2012 had some great moments for vegetarians and vegans.

And some not so great ones.

Here are Vegetarian Star‘s top Not So Vegetarian stories of celebrities and people in the news that have turned heads, offended and or just looked a little ridiculous.

#5. Mayor Bloomberg Washes Down Wieners Without Soda.
NYC’s mayor attended a competitive overeating contest (also known as hot dog eating contest) where the winners consumed dozens of processed, chemical filled animal wieners. He also ate one himself. Thank goodness he found time to attend this in the midst of his campaign to limit soda consumption to curb obesity. Because soda is the only real evil in making people fat. Not 60 hot dogs.

#4 Conan Whips Out His Wiener.
Not exactly indecent exposure, but the World’s Largest Chicago-Style hot dog does expose one to an increased risk of diabetes and cancer.
