The lovely Lisa Edelstein is gracing the cover of Coco Eco Magazine. Inside, this longtime vegetarian shares her advice for transitioning into a meatless diet, what she feels are the most important green issues and more.

Edelstein must love the idea of Meatless Mondays, because she recommends going vegetarian for a day to help people get adjusted and acquainted.

“Slowly jumpstart your culinary journey with a once-a-week commitment by leaving the animal products out of your repertoire for a single day/three full meals.”

“View it as a fun experiment rather than as a sacrifice – you might just discover that the food addictions you once had for bad-body-munchies end up shifting over to edibles that actually make you feel revitalized (and are healthy, to boot).”

Meatless Monday Creator Also Invented “Squeeze The Charmin” (Video)

Sid Lerner is the brain behind the Meatless Monday campaign in the U.S. He was motivated to create the idea after being told by his doctors his cholesterol and blood pressure were over the top. Lerner sees Meatless Monday as a way for everyone to reduce their intake of saturated fat and has worked, through a partnership with the Johns Hopkins School of Public Health, to extend the program to 80,000 kids in Baltimore’s school districts.

Lerner also Squeezed the Charmin back in the 60s. No, it’s not a reference for any illicit activity, but a catchy slogan for the toilet paper commercials he created. Watch the commercial above and visit NPR for an audio segment Lerner.

Meatless Monday Recipe–BabyCakes Blueberry Scones

If the thought of having to cook breakfast for your in-laws is scarier than being forced to sit in a smelly steakhouse all day long, maybe a recipe making basic blueberry scones will ease the anxiety.

One Frugal Foodie had the task of doing so, and created Blueberry Scones, taken from Erin McKenna’s BabyCakes Cookbook.

Unlike most of the recipes from McKenna’s cookbook, the Blueberry Scones are not gluten-free, but still created with McKenna’s signature ingredients used in her bakeries in NYC and LA like coconut oil and agave nector.

M.W.: The United Nations issued a report a few years back stating that meat consumption did more to affect climate change than all cars, trucks and planes combined. This lead Paul McCartney to start the Meat Free Monday campaign, urging people to not eat meat one day a week. Do you think not eating meat one day a week is enough to help halt global warming?
E.B.: No, but it’s a step in the right direction. I always encourage people to expand their green diet. It’s a good choice for the environment and for your health.

Now that Mario Batali has embraced Meatless Monday at every one of his 14 restaurants, you might be wondering what you might find on the menu with the signature “MM” beside it.

Lupa Ristorante in New York City, for example, might have Meatless Monday patrons dining on Sweet and Sugarsnap Pea Cappellacci, a vegetable stuff pasta dish. And NYC’s Casa Mono features a beet salad with onions and honey almond granola.

Casino lovers in Sin City can go wild for wild leeks –Ramps charred alla piastra with olive oil, salt and pepper.

Lindsey Shaw‘s character Kat Stratford in the ABC Family’s 10 Things I Hate About You played some dirty meatless politics on this week’s episode.

In an effort to get the school to adopt Meatless Mondays, Kat teams up with her rival William Blankenship, to convince the student council to give the vegetarian day a go ahead.

Turns out, William was using Kat as well for his own very unveggie political agenda.

Patrick, the quite loner with an interest in Kat, never liked her getting cozy with William.

Kat would have made more progress hooking up with Patrick, who’s already eating soy dogs.

Everyone in school fears him, and they would have been scared away from the chicken finger line.

Heather Mills Speaks At Viva! The Incredible Veggie Show

“I am not telling people to stop eating meat and dairy altogether. I’m just saying come and try it one day a week, have a nice meal and do your bit for the environment.”

—-Heather Mills, according to the New York Daily News, on advocating being animal friendly and saving the planet. Heather’s new vegan restaurant, V Bites, is scheduled to open this week at Hove Lagoon in the UK.

Ironically, her ex  husband, Paul McCartney, is currently promoting his Meat Free Mondays campaign, encouraging people to give up meat entirely for just one day a week.
