Who’s says the only good tasting green dip is guacamole?

Kristen Bell enjoys a dip made from edamame, an immature form of the soybean still in the pod.

She told Shape, “My friend, Chef Renée Loux, created a low-calorie substitute for guacamole that’s so satisfying,” she says. “It’s just edamame, olive oil, rice vinegar, and salt.”

This dip packs an impressive 10 grams of protein per 1/2 cup serving. The recipe calls for frozen edamame, which is packaged by well known organic companies like Cascadian Farm or Woodstock Farms brands.

There’s no shortage of vegetarian cookbooks out there, but if you happen to find a book designed for omnivores that looks interesting, a fun task to attempt might be to see how you can vegetize or veganize the recipes with substitutions.

Kate Nash loves Jamie Oliver‘s Ministry of Food and finds no problem in swapping Quorn faux meat for mince in the lasagna recipe.

“I chose Jamie’s lasagne as my favourite recipe because I love Italian food and this is a really easy recipe to adapt,” Nash told The Guardian. “In this recipe I swap mince for Quorn mince, use lactose-free cheese and spelt pasta and it still works.”

Kristen Bell "Shape" Magazine

Kristen Bell "Shape" Magazine

Kristen Bell is on the cover of the September 2010 issue of Shape.

The magazine interviewed the vegetarian actress who gave her 30 rules to live by that include growing her own organic herbs and vegetables, using eco-friendly handbags and avoiding dairy with the occasional “cheat.”

Tip 24 is to “splurge wisely,” and for Bell, that means spending her money on sustainable fashion for a good cause.

“I don’t mind paying a bit more for things made with sustainable materials,” Bell said. “I love FEED bags by Ellen Gustafson and Lauren Bush [from $60; feedprojects.com]. They’re eco-friendly, and most of the proceeds go to feeding and educating children around the world.”

"The Dorm Room Diet" Daphne Oz

"The Dorm Room Diet" Daphne Oz

As part of our “Dorm Room Diet” book giveaway where we bring you a different tip from the book every day, today’s tip is about breakfast.

Every vegetarian should know how to whip up a simple breakfast tofu scramble, but that doesn’t mean they’ll remember to eat it in the 7:30 AM rush in between walking the dog, checking email and work/class. While it’s tempting to grab a sugary muffin or just swish juice down, Daphne Oz suggest you eat your biggest meal for breakfast in “The Dorm Room Diet.”

“I always try to live by the adage: breakfast like a king, lunch like a prince, and dine like a pauper,” she writes, adding this method gives you more time to use the calories.

Shouldn’t be hard to do, considering the several breakfast recipes are included in her book like a breakfast sandwich with black beans and salsa on whole grain bread.

To enter to win, The Dorm Room Diet, simply leave a comment giving your tip for staying healthy.

Moby

The best cooks do it without measuring, right? Either that or the end product is a horrible mess.

Given the fact Moby has been a vegan for over two decades, it’s safe to say when he whips up his homemade almond milk without following instructions, it’s a success.

Brandon Routh Has Vegan Pancake Cooking Super Powers

Written by Vegetarian Star on Thursday, August 12th, 2010 in Actors, Food & Drink, Recipes.

Brandon Routh

Brandon Routh plays a vegan with telekinesis powers in Scott Pilgrim Vs. The World, as it sure sounds like this guy has some super vegan cooking powers in real life.

According to an interview with Maxim, Routh has developed an egg and dairy allergy over the years, so he’s learned to modify one of his favorite foods and sometimes makes vegan pancakes.

Maxim: So you like pancakes?
Routh: I love pancakes. Always have. When I was growing up back in Iowa, we used to have breakfast for dinner. It was the one thing my dad was good at doing, so if Mom was busy he’d make us pancakes.

Routh: I’ve actually gotten a taste for vegan pancakes. I think the vegan ones I make are as good or better than the ones with eggs, butter, and milk.”

Martha Stewart "Dog Fancy"

Martha Stewart "Dog Fancy"

Yes, you read right. Today’s Meatless Monday recipe was designed to be enjoyed by those with four legs. Since Martha Stewart will be the first human featured on the October 2010 cover of Dog Fancy, which includes a special section about dog adoption, we thought we’d share a pet food recipe for Martha Stewart’s Blueberry Dog Biscuits that doesn’t involve killing another animal.

Since there’s only one egg, these vegetarian biscuits can easily be made vegan. Plus, the goodness of organic blueberry, quinoa flour, oat flour and flax meal might make you tempted to reward yourself with a “treat.”

These were shared from the associate food producer from The Martha Stewart Show, which she received from her mother, who bakes them for the family’s dogs.
