“Then there’s the energy required to operate factory farms, feedlots, slaughterhouses and trucks that transport animals and the amount of water that is squandered on animal agriculture (it takes more than 4,000 gallons of water per day to produce food for a single meat-eater compared to 300 gallons needed for a vegan). And don’t forget the edible crops that are used to feed animals instead of hungry, malnourished people. If we are ever to halt climate change and conserve land, water and other resources, not to mention reduce animal suffering, we must celebrate Earth Day every day – at every meal.”

Actor James Cromwell and NBA legend John Salley will speak to high school students on the benefits of a vegetarian diet after they watch the movie Avatar.

On Thursday, the 40th anniversary of Earth Day, Avatar director and writer James Cameron will take 5,000 students from Los Angeles schools to the Nokia Theatre where they will watch the movie and discuss its environmental themes, according to Look to the Stars.

Afterwards, Cromwell and Salley will discuss how to preserve the earth by following a vegetarian diet.

The event is part of the Eco Warrior training and competition where high school students give speeches with the theme of “An Environmental Lesson I Learned From Avatar and How to Apply it in My Community.”

Scholarships totaling $12,000 will be awarded and the winners will be announced during Cromwell and Salley’s visit.

Meeting three celebrities in one day, plus the chance to receive money for college?

Now that’s what you call a field trip!

Radhika Oswal was a “hungry vegetarian” traveling with her husband, Pankaj Oswal, chairman of Burrup Holdings Ltd. in Australia, when all she could find left and right were pizza and burger joints.

This was the reason she decided to launch Otarian, a global chain of vegetarian fast food restaurants, with a recent opening in New York City.

The couple is the same one that forbid construction workers from eating meat while building their billion dollar mansion in Australia.

Oswal jokes starting the restaurant was like getting her “PhD is vegetarianism and sustainability.”

The menu is lacto-ovo with several vegan options and according to Planet Green, the corporate office is aiming for a 98% recycling and composting rate.

Plus, there are carbon values for each item on the menu, comparing it to the carbon value of a meat item.

And how’s this for a fast food reminder? Otarian offers combo meals.

The carbon combos on the menu save at least 3 kilograms of carbon compared to a similar meat one.

“What’s really big is that three kilograms of carbon is equivalent to the amount emitted by driving 21 miles in an eco-car or 7 miles in a normal car, and is more than the average person’s journey to work every day,” Radhika said.

Race car driver Leilani Munter has recorded a PSA for Athletes Go Green on the effects of food on the planet as a way to raise environmental awareness.

Natural Resources Defense Council 11th Annual Forces For Nature Benefit

Stella McCartney has just opened her first clothing store in Milan.

The New York Times is reporting the store has a sustainable oak parquet floor, manufactured for the same furniture company her husband owns.

Stella is looking to make the entire store environmentally friendly, as she hopes to attain LEED certification, a standard implying the building is using resources like water and energy most efficiently, reducing CO2 emissions and maintaining a quality indoor environment.

The vegetarian designer who refuses to use leather or fur in any of her collections routinely makes decisions in her business to reach a higher level of ethics, which include using organic cotton, low impact dyes and manufacturing in countries that do not use child labor.

The Independent has named their Best of Green and vegan actress Natalie Portman was chosen as the best green celebrity.

Although Natalie’s eco and animal friendly shoe line, Te Casan, was a failure, her successes in activism both through living and campaigning make her one of the best choices.

After being vegetarian for years, she finally made the switch to vegan after reading Jonathan Safran Foer‘s book, Eating Animals.

Her work in Rowanda highlighting the lives of gorillas only further strengthens her resume as a advocate of animals.

Not only does Natalie care about her own source of food, but she has brought the issue of childhood nutrition to the spotlight as well.

As if her diet weren’t eco friendly enough, Natalie is making the resolution to travel carbon neutral.

Jackson Browne knows he should become vegetarian, but it’s the little things like Iberian ham that would make him give into temptation.

The one area of his animal eating life he’s looking to improve is seafood and it’s his mission to eat sea life that’s not endangered.
