Scott Jurek sat down for an interview with Portland’s AM Northwest to discuss his journey from a meat and potatoes Midwesterner to vegan ultra runner.

His mother’s diagnosis with Multiple Schlerosis forced him to take charge of the cooking decisions at home at the age of 10, but it wasn’t until later that he discovered the benefits of a vegetarian, then vegan diet on his performance.

Hear him discuss the excitement of both his diet and racing career.

Victoria Eisermann was the first guest evicted from the Big Brother home on the UK reality TV series.

Housemates commented on the reasons for her elimination, ranging from the “fact” she had “evil eyes” to having “these silly viewpoints.”

Silly viewpoints? Oooh. Sounds like someone didn’t want to hear a lecture about reducing their meat intake.

Jillian Michaels dispensed some valuable information on how a vegetarian can get their daily protein needs in her Everyday Health diet, nutrition and fitness column, Ask Julian.

“I’m a vegetarian — who also doesn’t eat seafood — so I’m constantly searching for good ways to get the protein I need,” writes the reader. “I find a lot of protein in soy products, but your plans recommend avoiding them. Any suggestions?”

Cornelia Guest has published a cookbook, Cornelia Guest’s Simple Pleasures: Healthy Seasonal Cooking and Easy Entertaining. As a vegan entrepreneur, it’s no surprise some of Guest’s simple food pleasures included in the cookbook divided by the seasons include Spring dishes like chilled asparagus soup, Summer dishes like Pesto Panini or any of her Guilt-Free Burgers, Fall pastas like spaghetti squash with Pine Nuts and Tarragon and Winter comfort dishes like Shepherd’s Pie and Spinach Tofu Lasagna.

Guest has several other pleasures besides those mentioned in her cookbook and she shared these with Luxury Travel Magazine.

Food Network chef Michael Symon sells t-shirts that read, “Eat More Meat.” The Chew hosts wrote a cookbook titled, A Modern Day Meat Bible. And at his Roast restaurant in Detroit, Michigan, there’s a regular meat item featured on the menu titled “Roast Beast of the Day.”

So what the heck is this guy doing professing his love for Meatless Mondays?

Timothy Bradley came out a champion at the welterweight competition at MGM Grand in Las Vegas this weekend.

Bradley beat Manny Pacquiao, an undefeated fighter since 2005, who was favored to win the match.

But even though he’s defeated legends like Oscar de la Hoya, Pacquiao was no match for superstars like tofu, beans and grains, as Bradley fought that day on an entirely plant-based diet plan he created specifically to prepare him for competition.

Carol Alt has published a cookbook, Easy, Sexy Raw, filled with 130 recipes containing foods she claims cured her of many ailments, including stomach issues and fatigue.

Those familiar with raw diets know they’re not always vegetarian, as is the case with Alt’s book, as some of the “raw food essentials” listed in the book include cured fish and meat. However, there are many vegetarian and vegan meals to choose from in Easy, Sexy Raw, like Salad Pizza with Tomato Sauce and Quinoa and Pesto Stuffed Tomatoes, a beautiful picture of which can be seen below.
