Bethenny Frankel hooked up with Ellen DeGeneres on her show to demonstrate making vegan cupcakes with vegan cream cheese frosting.

“I always try to do the vegan thing first because it is healthier,” Frankel says. “And you feel good about yourself.”

Frankel feels a little better about herself for shunning refined sugars and flours as well. Instead of white flour and white sugar, Bethenny opts for raw sugar and oat flour.

“It’s not a racist thing,” Frankel jokes. “Go against white–when baking.”

Not to mention many white sugars aren’t technically vegan, as these are often processed with animal bone char. Other Frankel suggestions include making your cupcake portion sizes like A cup breasts versus D cups. You’ll have to watch the clip for that full explanation.

Kris Carr Makes Juice Not War On “Good Morning America” (Video)

Kris Carr, author of Crazy Sexy Diet and several other books, appeared on Good Morning America for its “New Year, New You” series to discuss her new book and offer advice on eating a plant-based diet for better health. Diagnosed with Stage 4 cancer eight years ago, Carr made the switch to a veg diet and, as the GMA host described, “is thriving.”

Carr shared her daily breakfast drink, which consists of several green vegetables, a pear and a hint of ginger.

“The rest of the time I like to look at my plate and least 50% is covered in plants, greens,” Carr said when asked what her remaining meals for the day looked like. Brown rice, millet and beans are examples of what makes up the remaining 50% of her meal.

Lane’s House of Lane Catering & Food was one of several businesses lucky enough to score a contract with Super Bowl officials this year and will be offering 2,000 vegetarian bruschettas to party-goers at the Super Bowl tailgate party outside the Cowboys stadium in Arlington.

Dallas News deliciously described the bruschettas as consisting of, “traditional French baguette, a raisin-cinnamon loaf and a sun-dried and Kalamata olive round.”

Mark Bittman

Breakfast food tastes good for any meal. How many times have you enjoyed waffles or tofu scramble for dinner instead of morning time?

Mark Bittman, food journalist and author of several cookbooks, including How To Cook Everything Vegetarian, was recently featured in Bon Appetit.

It seems the important things in life are designated by colors.

The infamous black book. The little black dress.

When Dr. Oz celebrated his 100th episode of “The Dr. Oz Show,” he shared the recipe for his Green Drink.

It’s a low-calorie breakfast drink that combines fruits and vegetables and only requires a simple blender–not a high end juicer–to create.

One of Daphne Oz‘s tips in her book, Dorm Room Diet, is to make breakfast the largest meal of the day.

In other words, eat like a Roman Gladiator would.

Scientists who’ve examined the skeletons of the soldiers discovered they were large beefcakes, but rarely ate animal proteins. Based on the levels of zinc and strontium in cells, experts are able to determine the diet of the deceased warriors. Because the Gladiators had higher levels of strontium and little zinc, it was determined they ate mainly vegetarian.

Yet, these guys were HUGE with strong bone density so it’s a safe bet they’re breakfasts consisted of high protein, good carbs and a decent amount of good fat like Oz’s super starter of the day meal, Gladiator Oatmeal.

Figure skating champion Kristi Yamaguchi has helped Safeway Foods relaunch its  “Lunchbox Winners” campaign, aimed to teach parents how to include healthier snacks in their kids’ lunches. The program was developed to support both the Produce for Better Health Foundation’s Fruits & Veggies — More Matters program and First Lady Michelle Obama‘s “Lets Move!” anti-obesity campaign.

The Lunchbox Winners website contains several recipes, many of which are vegetarian and vegan and include recommendations like hummus and soymilk. Our favorite winner: The Get Jammin’ Diggity-Dog featuring a banana on a hot dog bun with peanut butter and strawberry jam.

Betty Crocker Food Editor Makes Vegan Sugar Cookies

Last month, Betty Crocker Facebook fans picked alternative diets that included vegan and gluten-free cooking as a top holiday trend.

Kristen Olson, Food Editor of the Betty Crocker Test Kitchen, is riding the wave Betty Crocker fans are on and has provided a recipe for vegan sugar cookies.

Soymilk replaces dairy milk and vegan margarine gives the same buttery taste and texture of the real thing. You may have heard of commercially produced egg substitutes, but did you know 2 tablespoons of cornstarch accomplish the same purpose?
