Breakfast food tastes good for any meal. How many times have you enjoyed waffles or tofu scramble for dinner instead of morning time?

Mark Bittman, food journalist and author of several cookbooks, including How To Cook Everything Vegetarian, was recently featured in Bon Appetit.

Bittman is known in the green world for his “vegan until six” approach, which allowed him to dramatically reduce his meat intake, along with his cholesterol and weight.

From Bon Appeitit:

“At 57, after nearly 30 years as a food writer, I was overweight, I had high cholesterol and high blood sugar, and I suffered from sleep apnea and bad knees—the last two, I was told, were probably a result of my weight. A doctor friend suggested I become a vegan. My response to him was, “Are you kidding? You know what I do for a living.” His to me was, “Figure something out.”

And figure out he did, leading to an expansion of his palate that didn’t expand his waistline. Every meal before 6:00PM is vegan. After that, he eats whatever he wants, still trying to make more health conscious decisions when choosing food.

Bittman’s Spiced Coconut Pancakes with Tropical Fruit is something he’d eat before six. But there’s no rule saying you can’t have them later than that. Using both shredded coconut and coconut milk with nutmeg and allspice in the batter and topping them off with maple syrup and pistachios, eating these flapjacks after six may make you think you’re eating  your dessert and dinner at the same time.
