“If you start to use the v-word, people get nervous. Somehow, there’s a feeling from years ago that vegans are strange. There are so many negative connotations. There’s so much more to talk about apart from a word. It’s about nutrition and improving your health.”

Dr. Caldwell Essestyn, cardiologist and author of Prevent and Reverse Heart Disease, who saw a trend in the cholesterol levels of his patients who adopted a plant-based diet. Esselstyn recently attended a screening of Forks Over Knives, a film which examines the claim that major diseases that prematurely claim so many lives each year are caused by diet, particularly one heavy in animal products.

Esselstyn is a vegan, but told  CNN’s Eatocracy the film’s creators tried to leave it out of the film as much as possible.

Because it’s not about the “V” word. It’s about the “P” word. Go plant power!

Meatless Mouthful–Benjamin Zephaniah On Why He Went Vegan

Written by Vegetarian Star on Wednesday, March 2nd, 2011 in Authors, Food & Drink, Meatless Mouthful.

Benjamin Zephaniah

“It just comes from a love of animals really. I agree with a lot of people who talk about the health benefits and the planetary benefits of eating meat. But from all the shit I suffered when I was young – animals were always my friends. They didn’t judge me for my race, or for who I was. I hate it when people say things like “Hitler was an animal” – what animal? An animal wouldn’t do what he did!”

“Food is an emotional thing. People are attached to it like it’s a girlfriend or boyfriend. They’ll say, “I’m not giving up my fried chicken!” I say, “She’s cheating on you. She’s hurting your heart.”

Meatless Mouthful–Why Kathy Freston Likes Fake Meat (Video)

Kathy Freston "Veganist"

“Here’s why I’m unabashedly pro-faux: It’s much better for human health, exponentially better for our environment, and infinitely better for animals.”

“I wish that we lived in a world where every family had the time, know-how, means, and motivation to prepare healthful, from-scratch meals brimming with organic vegetables, whole grains, and slow-cooked beans. There is no doubt that this is the ideal, and that we’d all be a lot better off if we ate this way.”

Meatless Mouthful–Fran Healy On Changing The World

Travis Fran Healy

“Trying to change the world is a one-way ticket to a sore head. You just need to try to be a good human being. And if by dong that, you inadvertently change the world, then great. Try to be a decent person, it’s the easiest thing you can do. If everyone did that, we’d all be cool. We’d feel like we were living in a utopia.”

Fran Healy, singer and song-writer for the Britpop band Travis. In late 2010, Healy released a solo album, Wreckorder, which featured Paul McCartney. As a thank you to McCartney for collaborating with him on the album, Healy went vegetarian. An interview with Healy on his new veg lifestyle and music career can be found in the March 2011 issue of Vegetarian Times.

Meatless Mouthful–Russell Simmons On Green Business

Written by Vegetarian Star on Monday, February 21st, 2011 in Business, Environment-Eco-Green, Meatless Mouthful.

Russell Simmons

“I invest in things that I have faith in. For example, building a financial company (UniRush Financial Services) that serves people who were thrown away by the banks which developed a technology that speaks to the middle class. It has to be an idea that is aligned to the principles I live by. I don’t have any products that I don’t believe in. I won’t take part in the suffering of animals, exploitation of people or abuse of the planet. I can’t say that I’m a vegan and then own a steakhouse. It’s a karmic thing–you get what you give. It’s kind of nice when you’re serving the planet. I can go to sleep.”

“I think we need local foods. They might not all be organic. One of the real problems is that all regulations favor bigger business so there are a lot of organic small producers that can’t afford to get certification. Right now about 2% of our food is organic. It’s the fastest growing segment. I think that local is just as important if not more important. And there’s a site, by the way, for your readers. It’s called the Dirty Dozen. It’s the 12 worst things to eat [non-organically]. You don’t want to eat industrial versions of these 12 items.”

Robert Kenner, director of Food Inc. Buying local before organic can save money and fuel used to transport food across the country. But there may be some foods you always want to buy organic, due to the amount of pesticides retained on their surfaces after they’ve been picked. Which fruits and veggies are dirtiest? View the list yourself to find out and always buy those organic to avoid consuming produce known to carry the highest pesticide residues.
