“There are a lot of people who talk about changing things. But there are few people who actually do.”

“I definitely feel as though veganism intimidates some people…but if I could get people to eat one vegan meal a day, or at least trying those options, that’s what matters to me.”

Danielle Konya, founder and owner of Vegan Treats, a vegan bakery in Bethlehem, Pennsylvania. Konya will be the star of a new Animal Planet series titled Sweet Avenger. The show will focus on Konya’s life as a vegan baker, activist and mom.

“One of the reasons I wanted to do this cookbook is that after I was diagnosed with breast cancer five years ago, I changed the way I was eating because I wanted to have a pro-active part in my recovery, as well as my sustaining health and Chuck knew so much about it.”

Sheryl Crow, on her new cookbook, If It Makes You Healthy, which she co-wrote with her personal chef, Chuck White. The cookbook happens to be vegetarian and vegan friendly. Inside, you’ll find recipes that call for soy crumbles and quinoa for protein, as well as vegan chocolate desserts. If you’re an omnivore who picked up the book thinking “healthy” meant lower fat cheese and leaner meats, don’t be afraid to try to veghead recipes. It just might be your Favorite Cooking Mistake.

“First it’s important for me to say I’m not perfect and that for me, it is about the principle. Sustainability is important, recycling is important. I think it is a mind-set: everyone can do really simple things to make a difference, every little bit counts and there is still a long way to go. My first job is to be a fashion designer — my first job is to make desirable, luxurious, beautiful clothing and accessories that women want to buy but I will always take the opportunity to use a beautiful organic fabric. I obviously don’t use any animal skins or furs in my collections which has a huge impact on the planet. About fifty million animals die for the sake of fashion ever year, which is extremely wasteful and significantly contributes to climate change as farming uses a lot of water, energy and land, devastate forests and pollutes oceans.”

“Seal hunting is one of the most atrocious and inhumane acts against animals allowed by any government. Canada is allowing the slaughter of a record number of seals in their 2011 hunting season, which is going on right now. The seals are often younger than 3 months old. This has to stop. To my friends and fans in Canada: please help put a stop to this.”

Ellen DeGeneres, on a post to her show’s website, calling for fans to donate to help end the seal hunt. This year, the Canadian government has set a quota for 468,200 seals that can be killed.

“I think when you say you’re vegetarian, it hits a button in people. Somewhere deep inside them, they go ‘Ooh. That makes me feel weird. I have to think about what I’m eating. That’s hard!’ But vegetarians can be painfully self-righteous. I’ve been a vegetarian for 30 years and I’ve certainly gone through militant phases where Chrissie Hynde and I have been like, ‘Fuck you, meat eaters!”

k.d. Lang, on how she’s gotten a little nicer about being a vegetarian over the years. Of course, many people, especially in her hometown where cattle is king, haven’t always been nice to her.

“When programs like “The Martha Stewart Show” devote valuable air-time to the plight of farm animals and the benefits of veganism, a powerful message is planted in the public consciousness demonstrating that these issues are important and worthy of our consideration. Stewart has built a media empire based on her uncanny ability to influence the tastes and opinions of consumers. When she speaks about the importance of showing compassion for farm animals, millions of people — many of whom may never have considered these issues before — listen.”

Gene Baur, president and co-founder of Farm Sanctuary, and one of the guests on Martha Stewart‘s vegan episode which aired earlier this week. Martha recently adopted an animal on the sanctuary, a sheep named Persia.

“I wanted people to have an opportunity to really be kind to themselves—once and for all, have everything they ever dreamed of, like the strongest immune system, the most beautiful skin, increased energy so they are just so vital, and reduced risk of illness—from the really scary ones like cancer, heart disease, diabetes and arthritis to allergies and asthma. The great news is that in that process you are also being kind to the planet and also kind to other creatures and also kind to children and people of the world who have no food. So it really just sums up what is possible through our food choices.”

“Velma Johnston, also known as Wild Horse Annie, grabbed hold of me from the moment I read about her in Deanne Stillman’s fascinating book. Despite physical and emotional challenges, Johnston committed her life to getting federal protection for our wild horses and burros, saving them from cruel roundups and barbaric slaughter.”

Wendie Malick, star and producer of Wild Horse Annie, a movie about the life and work of Velma Johnston, animal activist who wanted to stop the removal of mustangs and burros from public lands.
