Bryant Terry and Jidan Koon kept their wedding details eco-friendly, from holding the ceremony at their home using materials already owned, to using an ethical engagement ring from Brilliant Earth jewelry company.

The custom made sapphire is Jidan’s birthstone.

Brilliant Earth is an ethical jewelry company based in San Francisco that doesn’t source diamonds from regions where forces that are opposed to recognized governments control the areas and funds are used to support military action in opposition to recognized governments.

You may recall recent news stories about Naomi Campbell testifying about a diamond she received from Charles Taylor, a man accused of taking illegally mined diamonds from Sierra Leone insurgents in return for weapons that were used in a campaign of terror which killed 120,000 people and enslaved children.

Whole Foods’ CEO John Mackey recently told USA Today that the store will be unveiling a new, private label line next year that famous vegan firefighter and author Rip Esselstyn would approve of.

“We’ll introduce a private-label line in 2011 based on the healthy eating book The Engine 2 Diet,” Mackey said. “We’ve licensed that brand. It’s vegan (no animal fats) with no canola or safflower oils, and low in sugar and salt.”

The line offers products similar to what Mackey eats, but he insists that has nothing to do with its creation.

“Though that is the way I live, it is not my personal lifestyle driving this. We think it will be a good product category for the company.”

Looks like vegs will be ringing in the New Year with another option in good food.

Paul Vasquez, otherwise known as the “Double Rainbow” guy in the Microsoft Windows Live Photo Gallery commercial told Fast Company he’s currently working with an agent to star in a TV film pilot about his life living in the wilderness.

Vasquez, who further complicates the aliases after saying he likes to be called “bear,” said the pilot will highlight his life in martial arts, vegan eating, losing weight, building his home using alternative materials, using alternative energy, and organic farming.

Interestingly, Vasquez says he’s been living on about $5,000 a year for the past few years. He hasn’t made big bucks off the Live Photo Gallery commercial yet. Guess  you can say he’s still waiting for the pot of gold at the end of the double rainbow. If he’s eaten vegan during all these years, it would be great to have him demonstrate cheap, natural animal-free eating on the pilot as more questions burn the mind on how he survives.

Dalai Lama Urges Cage-Free Eggs. May We Suggest Trader Joe’s?

The Dalai Lama has written a statement posted on the Humane Society International’s website, urging consumers to purchase cage-free eggs from producers that allow hens to live in more natural conditions.

“The abuse we inflict on hens has always been particularly disturbing to me and I have always been particularly concerned toward how these animals are treated in industrial food production. I am troubled to learn about the practice of confining egg laying hens in tiny cages. In these cages, birds cannot engage in their natural behaviours, such as spreading their wings, laying eggs in a nesting area, perching, scratching at the ground, even standing on a solid surface. Each hen has less space to live than the very sheet of paper I have written this letter on.”

Discovery Issues Statement On James Jay Lee Hostage Situation

Discovery Communications Inc. has issued a statement on an earlier incident involving  James Jay Lee taking employees hostage before releasing them and being killed by police. Lee was upset with the network’s programming, saying that while it claimed to promote environment issues, shows displayed exactly the opposite.

“First and foremost, Discovery Communications wants to express how relieved and grateful we are that all employees and the children from the Discovery Kids Place daycare center are safe. Employees in Silver Spring demonstrated courage, compassion and cooperation throughout the situation, which aided law enforcement efforts — for which we are thankful and proud.”

Roger Ebert Thinks Soo Foo Mix Goes Good In “The Pot”

Roger Ebert is proving no disability will stop his passion for critique and advice. Although complications from oral cancer robbed him of the ability to speak, he’s turned this hardship into a motivator. After writing a cookbook on rice cookers, The Pot and How To Use It, Ebert continues to guide people’s decisions in the kitchen through a recent New York Times column where he answers questions readers have left for him about cooking and life in general.

One reader was looking to replace boxed Zatarain’s beans and rice with a slow cooked, homemade version, but was unsure of what goes best in The Pot.

“I love a rice cooker meal of Zatarain’s rice with vermicelli, black beans and frozen vegetables (and turmeric)! I have unsuccessfully tried to duplicate the texture of the rice mix with rice and broken vermicelli. I am wondering if you have experimented with this. I am considering using orzo.Thanks Roger!”

Ebert’s recommended a mix of legumes, grains and seeds called Soo Foo.

Amy’s Kitchen has kept vegetarians and vegans on a full stomach for over 20 years, and now one of the biggest restaurant chains in America is adding its veggie burger to the menu. As part of both Denny’s “Hand-Helds” and “Better for you options,” customers can order the meatless patty either with Pepper Jack cheese, fresh spinach, tomato and grilled mushrooms on a wheat bun or anyway they’d like.
