The Risk Takers: 16 Women and Men Share Their Entrepreneurial Strategies for Success was recently published and contains stories of how very famous businesses like Kinkos and Geek Squad made it.

Amy’s Kitchen, a popular line of prepared and frozen vegetarian and vegan frozen foods is included among the companies.

Andy and Rachel Berliner were both vegetarians who knew products already available to vegetarians two decades ago were tasteless, full of processed food and void of organic ingredients.

Today the company reports annual revenues of $270 million from sales of tofu pot pies, vegan pizzas, burritos and salsa.

Amy’s has also been named a favorite by celebrities like Chris Walla of Death Cab for Cutie.

Mark Bittman took a jog with vegan marathoner Scott Jurek before heading over to his home to eat a meal cooked by the athlete and discuss his diet and career for Bittman’s column in the New York Times.

The pair ate a greek salad with tomatoes, cucumbers, olives, seaweed, a tofu and vegetable dish with miso and cashew sauce and quinoa.

This is what an athlete that races in 100 mile competitions fills up on?

It’s completely normal, assured Jurek, who consumes 1,000 calorie smoothies with nuts, fruits and protein powder, plenty of sweet potatoes, tofu and tempeh combos and beans and grains during training for a big race.

“None of this is weird,” Jurek said. “If you go back 300 or 400 years, meat was reserved for special occasions, and those people were working hard. Remember, almost every long-distance runner turns into a vegan while they’re racing, anyway — you can’t digest fat or protein very well.”

Mike Tyson And Wife, Lakiha Have Dinner At Mr Chow On May 11, 2010 In Beverly Hills, CA

Mike Tyson has been seen out and about since announcing he’s become a vegan and TMZ thinks the boxing legend has slimmed down from his diet.

The site also take a stab at Tyson’s new eating habits, saying, “So long Iron Mike … hello, Iron Deficient Mike!”

So disappointing, considering TMZ’s Harvey Levin was showing off a vegan wallet months ago.

If you think being vegetarian or vegan means iron deficiency and weakness, you need to watch your Popeye episodes because all the sailor man ate was spinach and he never missed a beat!

Dr. Neal Barnard, president of the Physicians Committee for Responsible Medicine, has this to say about meatless diets and iron:

“Iron balance tends to be better on pure vegetarian diets than on other diets. Green leafy vegetables and legumes (beans, peas, and lentils) are rich in a form of iron that is more absorbable if your body needs more iron and less absorbable when your body already has plenty of iron. Avoiding dairy products helps, because they contain virtually no iron and can actually inhibit iron absorption.”

And Dr. Neal Pinckney from The Healing Heart Foundation adds this:

“Most vegetarian diets are high in ascorbic acid (vitamin C), which increases iron absorption up to six times, making the absorption of plant-based iron as good or better than animal-based iron.”

The next obvious step is to double check the list of vegetarian sources of iron to make sure you’re buying the right foods at the grocery store.

Then send a copy of the list to TMZ.

Ginnifer Goodwin "VegNews"

Ginnifer Goodwin "VegNews"

Ginnifer Goodwin is on the cover of the May/June 2010 issue of VegNews Magazine.

The magazine has titled this issue the “Big Love” one, and not just because of the actress’ hit HBO television series. There is also a section on vegan weddings!

Goodwin discussed the factors that led her to become vegetarian and her work with the Humane Society of the United States as well as that controversial cover shoot for W magazine where she wore leather.

“I had written the magazine, my publicist had talked to the magazine, and there was not going to be a way for me to do that cover without wearing the clothes they needed modeled, which of course made me uncomfortable because I was clad in all leather. I would never do a fashion campaign selling leather. I would never accept money to model leather.”

Goodwin took a lot of criticism from the vegan community for agreeing to do the shoot, which she says, “really did break my heart.”

“I took solace in Rory Freedman, a new friend a the time, who made me feel a lot better about the decision to have taken the cover over not having taken it as an opportunity to talk about the issues.”

Read the entire interview in the May/June issue of VegNews on the stands now.

Lisa Simpson "The Simpsons"

Lisa Simpson "The Simpsons"

Last night’s episode of Top Chef Masters had the competing chefs making meals that would please The Simpsons.

As you probably already know, there are two characters that shun meat on the popular cartoon, Lisa Simpson and Apu, and the chefs who cooked for them whipped up delicious sounding vegetarian delights.

The judges included some of The Simpsons’ crew, like creator Matt Groening and Hank Azaria who voices Chief Wiggum and Apu.

Jody made a Cracked Wheat Salad with Goats Milk Ricotta and BBQ beets and baked kale chips for Lisa, which the judges thought she’d love, and Marcus created Tomato Soup with Rice, Chickpeas, Chutney, Melon and Nuts for Apu.

Unfortunately, it was Rick’s shrimp meal for Homer that won.

But hey, Jody and Marcus’ meals sure give you great ideas for dinner!

Part Time Vegetarians “Flexitarians” On The Rise

Written by Vegetarian Star on Wednesday, May 12th, 2010 in Flexitarian, Food & Drink, Research + Science.

His and Her Shopping Baskets

Meat eaters who will forgo the hamburger on most days and opt for the pasta with “wheat” balls are on the rise.

According to a new study discussed in The Mirror, record numbers of flexitarians, or people who eat vegetarian sometimes are forming.

Sales of  products such as fake meats have doubled over the last decade in the UK, according to the Vegetarian Society.

“The real growth area is in ‘meat reducers’ – those who haven’t given up meat completely but who are making a conscious effort to eat less of it,” said Su Taylor, a spokesperson for the company.

There are different ways to incorporate a part-time vegetarian lifestyle.

Treehugger founder Graham Hill follows a weekday vegetarian plan, while author Mark Bittman recommends a “vegan until 6” deal.

Still, others eliminate some animal products entirely, like red meat and dairy, replacing them with plant based alternatives.

RANT 071: Control Freak Vegetarian Bitch

Project Rant | MySpace Video

Project Rant features actors reenacting complaints from the anonymous “rants and raves” placed on Craig’s List.

Control Freak Vegetarian Bitch was posted by someone who didn’t like his or her dinner date asking the manager if the bun for the veggie burger had dairy in it.

Or if the beans could be ordered without butter.

Or if the portobello mushroom cap was grilled on the same grill with meat.

“You make it impossible for me to enjoy myself at a restaurant. I know why you do this. You want to have some small bit of power so you can wield it like some sort of fu*king flag. I think this is the real reason why you are a vegetarian. You like bullying the wait staff into listing the ingredients of every item and how each one is prepared.”

“It’s so embarrassing to go out to eat with you because I know you’ll pull this sh*t.”

Well, well.

It’s so obvious this was written after a fight or breakup with the vegetarian significant other.

There’s more and it just gets nastier in the above video.
