Author Kathy Freston, the lovely lady who inspired Oprah Winfrey to do 21 days of vegan, recently blogged at the Huffington Post on the statistics of the effects going vegetarian has on the environment.

Fun facts to take with you to the party tonight:

If everyone went vegetarian just for one day, the U.S. would save:
100 billion gallons of water, enough to supply all the homes in New England for almost 4 months

1.5 billion pounds of crops otherwise fed to livestock, enough to feed the state of New Mexico for more than a year

70 million gallons of gas–enough to fuel all the cars of Canada and Mexico combined with plenty to spare

If everyone went vegetarian just for one day, the U.S. would prevent:
Greenhouse gas emissions equivalent to 1.2 million tons of CO2, as much as produced by all of France

3 million tons of soil erosion and $70 million in resulting economic damages

But Kathy’s favorite statistic of all is this:

“According to Environmental Defense, if every American skipped one meal of chicken per week and substituted vegetarian foods instead, the carbon dioxide savings would be the same as taking more than half a million cars off of U.S. roads.”

Vegetarians normally want others to refrain from meat altogether, forgetting the improvements that can occur when omnivores “meat” them halfway. A flexitarian diet not only holds bonuses to the dieter, but every living thing on the planet.

So what are you waiting for, potential flexitarians? Don’t be a chicken, put down that chicken!

If you keep up with the vegetarian celebrity news like we do, you know some of them have a tendency to flip flop between being veggie and eating meat, cough, cough, Anne Hathaway. So if you were in the business of predicting which celebrities would go veg/go meat/go veg, would you be a good forecaster?

Adam Kochanowicz, a vegan Examiner writer in Omaha, Nebraska thinks he can, and currently he’s got a “vegan pool” going, where he chooses which celebrities will go vegan and which will give it up, embarrassing vegans everywhere.

Jennifer Aniston, Matt Damon, and Barack Obama are all likely to go vegan. But Aniston is one who could potentially embarrass the vegans once she quits.

“Honestly, she seems like the kind of person to go vegan, eat chips and ramen, then quit and publicize how terrible it was,” Kochanowicz said.

A couple of celebrities predicted to give up vegan are Natalie Portman and Oprah Winfrey (ahem, once she goes back to vegan).

Oprah follows a new fad every other week, so although she might take up the diet and lifestyle again, there’s a good chance she’ll hear about something that gives her an excuse to give it up.

We’d have to disagree with Natalie Portman, since she seems like such an ethical vegan, making the decision to go vegetarian at a young age for ethical reasons as well. A Harvard graduate, Natalie is much too intelligent to be swayed that easily. Sorry, Adam. We think you’re wrong on that one!

Chrissie Hynde’s gotten a lot of publicity for opening a vegan Italian restaurant in her hometown of Akron, Ohio, but her Executive Chef, Scot Jones, may have been hiding in her shadow.

Not anymore.

Jones has authored a few chapters in an upcoming vegan cookbook and while he wasn’t in The Vegiterranean kitchen perfecting spaghetti with “rawmesan,” he developed recipes for Oprah’s famous 21 Day vegan cleanse.

The book’s working title, The Conscious Vegan, is written by chef Tal Ronnen, founder of Veg Advantage, a non-profit organization that helps restaurants put vegetarian items on their menus.

When Jones met Ronnen to consult on the menu for The Vegiterranean, the two hit it off well and Jones was asked to assist in providing recipes for Oprah Winfrey’s 21 day vegan cleanse.

”He used 21 of my recipes and 21 of his recipes to do Oprah’s 21 Day Cleanse in Hawaii last summer,” Jones said.

The book is scheduled to be released this fall and will feature a couple of chapters and recipes from Jones, like SPLIT PEA SOUP WITH TEMPEH BACON AND CHIPOTLE CREAM.

Jones isn’t a vegetarian yet, but he’s added more vegan foods into his diet.

Oprah Winfrey Joins Obama On Campaign Trail

Some have accused Oprah Winfrey of being an attention fiend.

And she does push herself in the spotlight frequently, from her support to certain political candidates to letting everyone know what book she’s cuddling up with instead of Stedman for the week. She has her face on the cover of every one of her magazines, for goodness sake.

But attention fiends can be good, especially if they’re garnishing it for the right reasons. And that’s exactly why the U.S. division of People for the Ethical Treatment of Animals (PETA) has chosen her as Person of the Year 2008.

She’s used her power to draw attention to a variety of animal abuse. After following a plea on a billboard in Chicago to do a show on puppy mills, she aired an episode that featured undercover footage of horrible conditions at one located in Pennsylvania. Her audience also got to see the torture that chickens, pigs, and veal calves endure in conventional factory farms.

Earlier this year in April, she dedicated an episode of her show to her late cocker spaniel.

Let’s not forget, she went vegan for 21 days and told the world about it!

Hats off to Oprah. Good thing Time Magazine’s Person of The Year,  Barack Obama, is a slender man. He definitely needs to make room for some other great people in the spotlight.

60th Primetime Emmy Awards - Show

First a three week vegan stint, now Oprah Winfrey’s sporting animal free bags!

The big “O” made an appearance at the Emmys at Nokia Theatre and stopped to grab some goodies at a few booths while she was there. According to Eonline, Miss Winfrey chose to make a fashion statement by picking a vegan bowling bag designed by Stella McCartney! The actual design was a LeSportsac’s in purple-gray.

Winfrey also picked up some jeans that are suppose to fit you perfectly after you give a computer some measurements and blah, blah, blah, but we thought it’d be best to cover mainly the most important news. Will Oprah Winfrey Get Naked?

Some things are just too creepy. In an interview almost a year ago, Alicia Silverstone said she wanted to see Oprah naked…

But that’s not the creepy part, though, ha, ha. You see, Alicia was talking about her passion for vegetarianism and how she wanted to see such a famous and powerful person like Oprah go vegetarian because of the sheer influence the talk show diva has.

“I would love to see Oprah naked — that’s a goal for me,” she said. “It would be great if she became a vegetarian; she is a very powerful woman and would really get the message across.” Silverstone was referring to Oprah taking a stance on vegetarianism by posing nude for PETA, like herself and many other celebrities have done.

In case, you didn’t know, Oprah went vegan. But only for 21 days as part of a detox process. But she reported to have enjoyed both the experience and the food.

Now for the creepy part. How could Alicia Silverstone be so psychic? Oprah went vegan months after Silverstone made her statement. Are we in store for a nude Oprah soon?

It would be great if she returned to at least some form of vegetarianism again, or even vowed to reduce meat and made it one of her Oprah campaigns, along with designer lip gloss, book clubs, and dozens of other trends she starts and somehow makes millions of women (and men) follow. Is Oprah the next nude pin up for PETA posters? We’ll be on the lookout for more Alicia Silverstone predictions, as this girl seems to be getting all too good at them.
