Dan Barber On The Self-Righteous Vegetarians

Written by Vegetarian Star on Friday, June 29th, 2012 in Chefs, Environment-Eco-Green, Food & Drink.

Dan Barber

Dan Barber, executive chef and co-owner of NY’s touted as sustainable Blue Hill restaurant, has written a piece for the Wall Street Journal, criticizing vegetarians and vegans who automatically presume their diets are more environmentally conscious.

“I’d like some to explain the phenomenon of the self-righteous vegetarian to me,” Barber wrote.

“I’m not here to say I don’t eat vegetables—I do, a lot of them—but, from a soil perspective, they’re actually more costly than a cow grazing on grass. Vegetables deplete soil. They’re extractive. If soil has a bank account, vegetables make the largest withdrawals. So without animal manure, where are you going to get your soil fertility for all those vegetables in an organic system? You are, by some measures, forcing crops into a kind of imbalance.”

“Industrial agriculture is a part of the problem. Organic farming, relying on more productive, safer methods to put carbon back in the soil, produce safer and better food–that’s a big part of it. The shift towards a more meat-intensive diet is also part of the problem. The clearing of forest areas in many parts of the world in order to raise more cattle–that’s a part of it.”

Al Gore, in an interview with FearLess Revolution founder Alex Bogusky where he discussed the impact of food choices and environmental destruction.

It’s good talk. Now let’s see Al get into action by giving up meat entirely.

Actor Jason Schwartzman (Rushmore, Scott Pilgram vs. The World, Bored To Death) has narrated a short film on the effects of the meat industry and the environment.

This isn’t a dry lecture that spits out facts, but an entertaining flick which features a day in the life of a man (Schwartzman) who wakes up one morning with the same question everybody does, “What am I going to eat today?” and starts it off with bacon and eggs.

Suddenly, Schwartzman’s entire day–from driving to work to sitting in the office to shopping for dinner–is filled with messages about the destructive effects of meat and the environment. From reading the morning newspaper to stumbling on a website at work, each encounter Schwartzman has brings him closer to the realization that factory farmed meat is destroying the Earth and causing health issues for humans who don’t even eat it.
