Real Housewives of New York City star and celebrity natural foods chef  Bethenny Frankel has created a series of recipes that uses Pepperidge Farm‘s new 100-Calorie Deli Flats Thin Rolls.

“Deli Flats thin rolls offer a soft, wholesome and delicious taste in a figure-friendly portion. I love recommending them to friends and clients,” said Frankel. “At 100 calories and five grams of fiber per roll, Deli Flats are a good foundation for everyday healthy eating and an important part of making smarter sandwiches, better burgers and more. In my opinion, Deli Flats thin rolls are the greatest thing since sliced bread!”

Pepperidge Farm 100 calorie Deli Flat Thin Rolls come in Soft 100% Whole Wheat, Soft Oatmeal and 7 Grain.

Since Bethenny has remembered her veg fans in the past, we aren’t surprised this batch of recipes includes a vegetarian sandwich with hummus and eggplant, the feta cheese being optional if you’re vegan.

DC Green Fest 2009 Featuring Shaberman “The Vegan Monologues”

DC Green Fest

Washington, D.C. is holding a green fest this Saturday October 10 from 10AM-7PM and Sunday October 11 from 11AM-6PM.

The event, put on by greenfestivals.org, will take place in the Washington Convention Center located at 801 Mount Vernon Place, NW in D.C.

Tickets range from $10-$29, depending on how many days you go and whether you’re eligible for special discounts, such as for students and seniors.

Besides political greenie Ralph Nader, several other notables will give presentations including vegetarian Ed Begley Jr., who will chronicle his last three decades to living more environmentally friendly and Ben Shaberman, author of  The Vegan Monologues, a humorous essay collection of  a vegan man’s life from finding food to catching a date.

Amanda Cohen, founder and owner of Dirt Candy, has been named “Chef of the Month” at the Veg Cooking Blog.

Dirt Candy is an all vegetarian restaurant in New York City and Cohen was received prestige for her work at the restaurant.

Veg Cooking sat down with Cohen to discuss all things veggie and here are some of Amanda’s thoughts:

Lube it up:
Splurge on good oils. Truffle oil, almond oil, hazelnut oil, or pistachio oil are all really nice ways to finish off a dish. You can drizzle them over just about anything, cooked or raw, and they add an extra, savory dimension.

On Favorite Veg Ingredients:
Right now, what I’m really into are potatoes. And even though beet season is wrapping up, I’ll probably stay obsessed with them until the year’s last beet is pulled up out of the dirt.

On Vegan Cooking:
Everything at Dirt Candy comes in a vegan and a non-vegan version, and I really like skipping back and forth between vegan and vegetarian cooking. Vegan cooking is challenging in a way that’s a lot of fun. It wakes your brain up. And I actually think that the Orange Tofu we serve is better vegan (we use coconut milk in the sauce instead of butter).

On Producing Great Vegetarian Dishes
Vegetarian food should be about what you can eat, not what you can’t. Aping the “protein, sauce, side of veg” format of the standard meat dish just reminds omnivorous diners of what they’re not eating, and it doesn’t do justice to vegetables, fruits, grains, and all the other fun stuff we get to play with. To me, breaking the “meat replacement” mold is the most important element in cooking great vegetarian food.

Hilary Swank Cries Over Meat Diet

Hilary Swank is feeling a bit guilty because she feel she has to eat meat to stay healthy.

The actress abandoned her vegetarian diet a few years ago because she was losing weight.

She told Marie Claire magazine, “I just started withering away. I wasn’t getting enough vitamins or protein. (It was) very emotional.”

“I sat over my plate and cried. I really had to work through it. It still makes me emotional. I don’t know if you have ever looked into a cow’s eye, but it is so soulful. So I don’t like it – but it’s something I have to do.”

Boo hoo. (Just kidding, we really are sympathetic. A little.)

However, with a bank account like Hilary’s this Million Dollar Baby actress should have no problem investing in some one on one diet counseling and expertise and even hire her own personal chef to ensure she gets the high protein plant based nutrition she needs.

Beans, tofu, faux meats, whole grain pastas, even veg powder protein supplements…the list is endless.

Not to mention the successful triathletes that sustain themselves on not only a vegetarian, but vegan diet.

Hilary’s wasting away was probably due to the fact she wasn’t eating enough food-not eating vegetarian food.

Maybe some cow will look her in the eye-and then curse at her so she’ll wake up and realize there are other options.
