Erin McKenna is featured in a series of interviews highlighting women who’ve impacted vegetarian cooking at lunchboxbunch.com, Veggie Girl Power: The Interview Series.

Erin is famous for starting up BabyCakes bakery in New York city, which features vegan sweets that cater to those with food sensitivities to ingredients like gluten and sugar.

The cool thing about Erin is that although she’s not a vegetarian, she’s been successful at creating a product that’s praised by vegetarians and meat eaters alike, plus she has no problem partaking in veggie food when the time is right.

“My favorite thing ever is Vegenaise by Follow Your Heart,” Erin said. “It makes everything taste better!”

If you’ve been hiding in cholesterol laden eggy mayonnaise, it’s time to give vegan mayonnaise a try!

Vegenaise comes in five varieties: Original, Grapeseed Oil, Organic, High Omega 3, and Reduced Fat.

Burberry Front Row: Spring/Summer 2010 - London Fashion Week

Gwyneth Paltrow has just did a double on us and made vegetarian/vegan the theme for the Make section the second week in a row on her website Goop.com.

The most recent addition features an interview with Erin McKenna, founder of celebrity adored BabyCakes NYC, a bakery specializing in sugar-free, gluten-free, vegan desserts like cupcakes and cookies.

Gwyneth’s featuring Erin’s recipes for Vanilla Frosting, Chocolate Cupcakes, Lemon Poppy Teacake, and Double Chocolate Chip Cookies.

Yum!

A few highlights from Gwyneth’s interview with Erin. Don’t forget to check out our interview with Erin when you get the chance.

GOOP: Are there any recipes you are working on that you are excited about? Or are there any old classics you are still trying to master? Will there ever be a vegan, gluten-free, sugar-free Twinkie?

Erin McKenna: I just made donuts a couple weeks ago, which was almost as exciting to me as when I came up with the frosting recipe. I LOVE donuts. I think they have the same appeal as cupcakes and evoke the same feeling. When I announced that we were now serving gluten-free, vegan, soy-free donuts at the bakery everyone lost it! Everyone went into a frenzy and one guy biked from Brooklyn through heavy rain just to try one. Luckily everyone loves them and some say it’s the best thing we make. I love it!!!!!

GOOP: Is spelt gluten-free? It is often a common misunderstanding.

Erin McKenna: Spelt is not gluten-free. It’s an ancestor to wheat and contains gluten. Some people who are wheat sensitive can tolerate spelt but not everyone.

HBOs Bored To Death Premiere

There’s a new HBO comedy starring Jason Schwartzman that’s sure to keep you laughing so hard on Sunday night, you’ll forget tomorrow’s a work day.

Bored To Death features Schwartzman playing a character named Jonathan who’s girlfriend has just moved out because Jason was less than the ideal man.

“My girlfriend broke up with me because she says I smoke too much pot and drink too much white wine. But she’s right! How can you love someone if you’re in a fog all the time?”

Jonathan is also vegan-but is currently not attending services regularly.

“You know, we really should all be vegans,” Schwartman says in one episode. “I’m kind of a nonpracticing vegan.”

In real life Schwartzman loves to devour vegan cupcakes from BabyCakes bakery in NYC.

As owner Erin McKenna told us, “The first time a celebrity made it known how fond he was of BabyCakes was Jason Schwartzman. He came in once by himself the first time and then brought a whole gang of friends with him and had an eating contest in here. He was going crazy over everything–it was really fun!”

Catch the Bored to Death premiere this Sunday, September 20 at 9PM on HBO.

You already know the desserts at Erin McKenna’s BabyCakes bakery are vegan and made with good for you ingredients like coconut oil.

Now, notable photographer Ryan McGinley shows they can be incorporated into a “healthy” New Yorker’s diet.

McGinley recently described his cupcake experience with Michael Stipe in the New York magazine weekly article, The New York Diet.

Apparently Babycakes cupcakes, coconut water, and vodka make a great balanced dinner.

“For dinner, at 8 p.m. I had cupcakes from Babycakes at Michael Stipe’s new apartment. It was a pre-housewarming, pre-curtains-on-the-windows party; he hadn’t been in town for three months. We drank coconut water and vodka…That was sort of dinner-ish.”

If you’re concerned about Ryan’s nutritional deficiencies, you’ll be happy to know he had another “dinner” at 3A.M, which consisted of a salad of arugula, roasted beets, tomatoes, green beans, new potatoes, broccoli, red onions, zucchini, and fresh fennel,  along with ravioli with ricotta.

All you East Coast BabyCakes vegan bakery fans, listen up!

Do you have a sister, brother, or cousin in California that keeps bugging the crap out of you to send some of those vegan, gluten-free cupcakes and cookies to their West Coast pad?

Soon you’ll be able to stop answering their phone calls and text them a little message that reads, “Get it yourself!” as owner Erin McKenna plans to expand her New York city bakery to downtown Los Angeles.

From a recent interview with vegnews.com:

VegNews: What made you choose LA?
Erin McKenna: We noticed most of our shipments were headed to Los Angeles, and realized the bakery was exactly what LA needed. [BabyCakes NYC] will be located on 6th and Main, which is downtown. We really love how eclectic it is down there—lots of creativity and diversity. Plus, the buildings are old so we feel at home.

VN: How will you split your time between the two locations?
EM: I’ll be mostly in LA for the first six months until I think the bakery is ready to lose its training wheels. I’m afraid I’m going to miss New York, but I’ll be enjoying the sunshine and laidback vibe of LA. I have my core staff already hired, but I’ll be looking for frosting boys and girls! Positive attitude is a must!

As if you really need another reason to enter our contest to win a copy of Erin McKenna’s BabyCakes cookbook as part of our one year anniversary giveaway. Isn’t the picture of the cupcakes on the book cover enough?

The lovely lady who founded the New York city bakery that is so popular among celebrities and mere non Hollywood mortals like ourselves answered a few of our questions about herself, the bakery, and some of her favorite recipes from her recently published cookbook, BabyCakes : Vegan, Gluten-Free, and (Mostly) Sugar-Free Recipes from New York’s Most Talked-About Bakery.

How did you determine which of your recipes to include in the BabyCakes cookbook?
I chose the recipes that people seemed to favor. I wanted to offer a collection of the greatest recipes.

What are a few of your favorite recipes from the cookbook?
I think my favorites are the volcanoes and the macaroons for sure.

You used to work in fashion and you said the one thing that really relieved stress at the end of the day was experimenting with baking and that prompted you to change careers. What advice do you have for aspiring entrepreneurs who may still be stuck in a day job and want to get out and have a successful business?
I would tell them to live fearlessly and go for what is in their heart. It will work out and nothing beats doing what you love for a living. It’s what life is about.

There are several celebrities that have their personal stories in the Baby Cakes cookbook like Natalie Portman and Pamela Anderson? What was either your first or most memorable experience learning a celebrity was so fond of your desserts?
The first time a celebrity made it known how fond he was of BabyCakes was Jason Schwartzman. He came in once by himself the first time and then brought a whole gang of friends with him and had an eating contest in here. He was going crazy over everything–it was really fun!

Guess how many siblings Erin has? Four, five, six, seven? Higher than that! Find out after the jump… (more…)
