Leilani Munter and her husband keep an organic vegetable garden fueled by compost in their backyard at home. On the track, this professional race car driver has placed recycled bins and sold t-shirts made from plastic bottles to spread her eco-friendly message to her fans. Munter, a self-described “vegetarian hippie chick” recently spoke with EcoStiletto on the environment, her vegetarian diet and racing.

Best Eco-Friendly Tip To Readers:
I want everyone to realize how much a choice at the dinner table can affect our environment. The single most important thing that you can do to help our planet is to cut back or, even better, give up eating meat. I know that not everyone reading this is going to become vegetarian, but I hope they will at least try to reduce their meat consumption, even if it’s just one day a week like meatless Monday!

Project Runway Finalists Fashion Show - Backstage - Spring 09 MBFW

A little update on that vegetarian sushi roll named after season 5 winner of Project Runway, Leanne Marshall. Although previous reports said Marshall had created the roll herself, The Portland Mercury is reporting the roll was already on the menu, and H50 Bistro & Bar simply named it after her, once she described what she looks for in a sushi roll.

Marshall said, “Basically, I told him that I normally go for vegetarian/non-fish sushi and then my favorite things: avocado, hot sauce, cilantro (and then listed pretty much all the ingredients to make a burrito. Ha!) As long as it had avocado and something spicy, I left the rest up to the professional chef. If it were me making it, yes, I would probably have tried to make burrito-sushi, and it would likely be a disaster!”

Ani Phyo‘s latest raw foods cookbook, Ani’s Raw Food Essentials is listed on the New York Times “20 More Cookbooks” in the Sunday Book Review.

Recently released, the book is divided into two parts: raw food basics–containing a list of raw ingredients, pantry items, tool essentials and recipes–featuring smoothies and elixirs, breakfast, snacks and condiments, soups, salads and dressings, wraps and sandwiches and burgers, pizza and noodles, dumplings and rice, and desserts.

There are even sample meal plans included at the end of the book.

One to try: Coconut Bacon. Completely vegan, of course.

Phyo has catered vegan food events for celebrities like Maroon 5.

Michelle Obama hosted several celebrities chefs at the White House garden, including Rachael Ray and Cat Cora, to harvest vegetables with school children to prepare a meal for the group to eat. Unfortunately, not every part of the meal was vegetarian, but the First Lady encouraged the chefs to help schools nationwide plant gardens.

About 900 chefs are signed up in the “Chefs Move to Schools” program, which pairs chefs with school communities to teach children and parents cooking skills and nutrition.

“You know more about food than almost anyone, other than the grandmas, and you’ve got the visibility and the enthusiasm to match that knowledge,” said Mrs. Obama during a speech.

The actual footage of the chefs and children harvesting vegetables from the garden takes place around minute 19:00.

Is Aziz Ansari, MTV Movie Awards 2010 Host, A Vegan?

An Evening with 'Parks and Recreation'

Aziz Ansari, star of the NBC comedy Parks and Recreation will be hosting this year’s MTV Movie Awards. From an interview with the New York Times, it sounds as if Ansari might be a vegan.

“Mr. Ansari made no apologies to the crowd at the theater, where the $5 tickets were cheaper and the jokes more meandering than they would be at those future gigs. As he had said that afternoon over lunch at a vegan restaurant in the Silver Lake neighborhood, “I even tell the audience, ‘You’re getting an inferior version of the joke so, I can work on it myself.”

Are holier than thou vegans not practicing what they preach?

Christina Pirello, vegan chef and author, recently discussed how some of the most compassionate people in the world–vegans–are not so compassionate when it comes sharing their lifestyle on others.

Drawing on the most radical example of a Sex and the City scene where an activist throws paint on someone to the seemingly harmless trash talk like that found in the Skinny Bitch books, Pirello thinks it’s time everyone lighten up and work harder to include others, versus applying strict labels and making them feel bad.

Earthlings has inspired many to go vegetarian and rethink their ideas about animals being used for human convenience. The director of the film, Shaun Monson, attended the World Fest 2010, an Earth Day festival in Los Angeles, California where he was briefly interviewed on vegetarianism, myths about protein and more.

Monson also touches on how humans have empathy for some creatures, like other humans and pets, but not farm animals.

“I suspect that if we view any expression of life with apathy that will mirror itself in humanity,” Monson says and cites a quote from Leo Tolstoy that says, “As long as their are slaughterhouses, there will be battlefields,” tying the link between killing animals and aggressive and general malcontent humans have towards other humans.

Meat affects on health, and more, this guy doesn’t miss a beat!

Guess That Demanding Vegetarian!

Business 2 The Daily Mail has a “Guess that celebrity diva” article, featuring some picky stars like Victoria Beckham and her requests for specifically chopped produce from specific stores. One vegetarian musician has some pretty strict demands, not only about eating, but also forbids animal hides in anything– vehicle or room. “…won’t travel in a stretch limousine with leather seats and issues blanket bans on animal skin coverings of any kind.
