Heather Mills’ Vegan Lemongrass Chicken, Muffin Cupcakes Recipes

Heather has also been gracious enough to publish the recipe for her vegan muffin cupcakes.

She had said she’ll be sharing recipes on her Twitter page. If that’s the case, we’ll be checking for her updates every hour!

In the meantime, let’s start on those muffin cupcakes. U.S. fans, we’ve got you covered with a handy Metric Conversion.

Ingredients

200g self raising flour
1 tsp baking powder
30g cocoa
55g maple syrup
90ml oil
230ml water
Topping
Any melted vegan chocolate

Preparation

1. Mix dry ingredients

2. Mix oil and water and stir into dry mix

3. Beat until smooth

4. Pour into muffin tins or ramekins

5. Cook at 350 f / 180c or gas mark 4 for 15 mins. Allow to cool

6. Pour topping (melted chocolate) on to muffin

Heather Mills leaves This Morning TV Studios after a cooking demo - London

Heather Mills demonstrated her cooking skills and gave her vegan restaurant V Bites some publicity today on the This Morning show on Britain’s iTV.

She showed off her animal free physique, wearing a black sporty top lined in white, and forgoing the apron guests usually wear when cooking on the show.

Heather thinks she can win people over with a just a few bites.

“I’m not telling people to stop eating meat and dairy altogether but people don’t have a great opinion about veganism and the easiest way to change people’s minds is to do it through great tasting food,” she told hosts Fern Britton and Phillip Schofield.

She took the time to explain the difference between “vegetarian” and “vegan” and whipped up a spicy thai dish using her V Bites chicken substitute.

Heather Mills Launches V-Bites Restaurant

Heather Mills is offering some of her vegan meals she serves at her V Bites restaurant in frozen entrees to eat at home.

But there’s a catch.

Your doorstep must be within mainland UK.

There’s no 30 minutes or less guarantee either.

Green gossip site Ecorazzi.com speculated this might be Heather’s frozen line of vegan meals she’s been talking about for some time. But other sources says those are expected to be named Mighty Meatless Meals in Minutes, so perhaps Heather’s just making some of her restaurant selections available for customers to heat up at home, with an additional frozen line to come.

Keeping with traditional British food, V Bites online offers Breaded Fish Style Fingers.

There’s also vegan versions of  hotdogs, quarter pounder burgers, as well as vegan Greek and smoked style cheese.

Ingredients for all products are simple, mainly consisting of soya or texturized vegetable protein and sometimes tofu in the case of the cheeses. A few spices here and there complete the meals that are high in protein, free from GMOs, and completely animal product and by-product free.

Heather Mills Launches V-Bites Restaurant

Acclaimed Hindu statesman Rajan Zed recently applauded Heather Mills for bringing vegetarianism to the media eye and opening her new vegan restaurant and cafe V Bites, saying more celebrities should do the same.

“More world celebrities should come forward to promote vegetarianism and persuade their fans to go vegetarian, thus contributing to a healthier world,” Zed said, in a statement to USA Today Nevada. Zed is the president of the Universal Society of Hinduism.

Zed pointed out that Hinduism promotes strict vegetarianism, and insists on ahimsa (not harming living creatures) and renouncing animal slaughter and meat eating. It also suggests taking of sattvik (vegetables, fruits) and avoiding rajasik (eggs) and tamasik (meat, intoxicants) foods.
