The month of January is almost over.

Many made New Year’s Resolutions at the beginning of the month.

For some of you, those resolutions were broken by January 2, 12:01 a.m.

Christina Pirello has a few tips to keep those commitments to better habits going in 2015.

She shared some of these during an interview that’s posted on The Mercury.

Who said anything about going vegan overnight? Pirello suggests making small changes in your diet. “Just add a vegetable in your diet in some way,” she said.

Matisyahu

Matisyahu last made the vegan news with a declaration of his love for greens.

“I feel dark green vegetables are really important, so every day i try to have some type of dark greens, whether sauteed or grilled or steamed, or in a juice,” he told Vegetarian Times.

Potatoes wouldn’t be the same without the (faux) meat, and a reuben sandwich with tempeh can be made even healthier by substituting greens for the fries.

Nigella Lawson was a recent guest on NPR’s Morning Edition.

The program has launched “Cook Your Cupboard,” a segment that explores what to do with the random items in your refrigerator you bought eons ago and need to find a use for.

Lawson took one listener’s collection of items and suggested several vegetarian dishes of chili, almond milk pancakes and cauliflower soup with almond milk.

A few years ago, Dan and Annie Shannon decided to adapt every recipe from the classic Betty Crocker Cookbook to remove all the meat, dairy, egg and other animal products.

After hundreds of experiments in their kitchen, the Shannons have finally put the finishing touches on each of the recipes and created Betty Goes Vegan: 500 Classic Recipes for the Modern Family.

“The Betty Crocker brand has a well deserved reputation as being the very best at teaching American amateur chefs how to use products and ingredients to their full potential,” Annie said in a 2010 interview with Kiss Me, I’m Vegan. “When we were putting together this project, we really wanted to help people see how easy it is to be vegan, and that you really can make anything vegan once you know the tricks.”
