Russell Simmons spent his Super Bowl weekend among good friends and good food.

“I had a vegan Super Bowl party at my house, and no one knew,” he told Grub Street. “I had fried chicken and ribs and all kinds of vegan stuff. Some things were obvious, but most you couldn’t tell were vegan.”

Russell Simmons is a thigh man. Or maybe a wing man. Dare we say a breast man?

He likes the taste of chicken, but as a vegan and someone who’s campaigned for better animal welfare standards at KFC, he won’t put his lips near one.

Instead he prefers to have faux chicken nuggets on top a bed of spinach, something he told The Skanner is his favorite meal.

“I like to put spinach on top of olive oil, and just let it wilt for a second. And then put vegan chicken nuggets on top of it. I’m not a big chef.”

Being the small-scale chef  he is, we’re guessing Russell buys frozen faux chicken nuggets. But if you like to wear that organic cotton apron a lot, try some of  the recipes that exist, using tofu, tempeh or seitan.

Russell Simmons recently chatted with Don Imus on Imus In The Morning and the two spent a considerable time discussing Simmons’ veganism. Here’s a little bit from the conversation.

Simmons: It’s one of the worst karmic disasters in human history. Fifteen billion suffering farm animals.

Imus: People, who, for example, go get a big ol’ bucket of chicken. The way those chickens are housed and slaughtered and tormented. I really think you’re taking on the karma of the chicken. These are tormented, tortured animals. They can feel pain just like you can.

One interesting twist: Imus is a vegan too. He’s also a cattle rancher. Watch the clip to hear Simmons’ response to the idea of Imus’ support of humane slaughter of animals.

Russell Simmons has released a book, Super Rich, an inspirational guide about finding wealth in both the spiritual and financial markets.

The vegan business mogul recently Tweeted to inspire his Twitter followers, asking them, “What would you do if you were Super Rich?”

One follower responded with, “I’m well on my way to being #superrich because I’m saving so many precious and innocent animals by not eating meat!!! ”

The vegetarian financial plan not only saves animals, but also the environment. One study concluded that $20 million of the costs of fighting climate change could be saved in terms of reducing greenhouse gases and making use of land used for animal agriculture. It was estimated these changes would also lessen the need for energy saving technologies, such as clean coal.

And in terms of human health costs, the savings estimates are in the billions.

And then also the greatest cause of global warming, [meat] and dairy uses more oil than anybody but the army. You go to war over meat because it is the second largest use of oil. It also drains our resources, like our water, more than anything.”

“The Ellen DeGeneres Show” recently got superveganized as Russell Simmons joined the vegan host with his assistants who starred alongside him in the Oxygen reality TV show, “Running Russell Simmons.”

Russell did briefly discuss his new book, Super Rich, but he wasn’t there to only talk about himself. Russell credited several scenes in “Running” showing assistant Simone Reyes discussing vegan and animal rights issues for increasing her popularity among veg and AR communities and the cameras gave her a few seconds of tube time.

They feel threatened, and there’s nothing we can do about it but try to lead by example and not make people feel they’re on a different side. Obviously anyone who loves animals has some compassion in their heart, but it’s easy to get frustrated and block out compassion for the people we want to change. They’ll change easier if they don’t feel hated.”
