Betty Goes Vegan

A few years ago, Dan and Annie Shannon decided to adapt every recipe from the classic Betty Crocker Cookbook to remove all the meat, dairy, egg and other animal products.

After hundreds of experiments in their kitchen, the Shannons have finally put the finishing touches on each of the recipes and created Betty Goes Vegan: 500 Classic Recipes for the Modern Family.

“The Betty Crocker brand has a well deserved reputation as being the very best at teaching American amateur chefs how to use products and ingredients to their full potential,” Annie said in a 2010 interview with Kiss Me, I’m Vegan. “When we were putting together this project, we really wanted to help people see how easy it is to be vegan, and that you really can make anything vegan once you know the tricks.”

Vegan Cooking for Carnivores

“The whole idea is baby steps. Try one dish a week. If it’s a big hit, throw it in the rotation, and then do another dish on Monday so then Monday is meatless, but Thursday is red beans and rice. What I love hearing is “My husband is a card-carrying carnivore, but I made him this dish from your book and he loved it so much he took leftovers to work.” When I hear that a dish is going to become someone’s staple, that’s just the coolest thing.”

Ellen DeGeneres

“I’ve always called myself an animal lover. And yet I ate them. Until four years ago I would be driving past these cows on pastures, and think ‘What a lovely life that is,’ and I’d go and order a steak. It takes a click, just one light bulb, and you’re like ‘I can’t do that anymore. Someone mentioned ‘If you knew what chicken looked like or you knew how chicken was made, you’d never eat it again. Something snapped.”

Ellen DeGeneres, in an interview where she discusses her journey to veganism. The article includes some tips on going vegan from DeGeneres’ personal chef, Roberto Martin, who’s just published a cookbook.
