“Whenever you see an item on sale in the produce department that your family enjoys, buy double of that. Bring it home, salt some water, put in the vegetable of choice, count to 30, take it out, cold-shock it, put it in a big plastic food storage bag and throw it in the freezer. You make your own homemade frozen veggies. They are even better than what you get in the store. You can tailor the cut or size when you are putting them away, and, especially if you’re shopping at farm stands, you’re never going to get that flavor of summertime corn unless you’re bringing it home and scraping it off the cob yourself.”

Rachael Ray and her dog Isaboo can be found on the cover of the October 2010 issue of pet magazine Tails Inc.

Inside, Ray discusses her charity, Rachael’s Rescue, which donates money she earns through her dog food line Nutrish, to North Shore Animal League, ASPCA, Bad Rap, and Vet Pets, with the remainder of the money going to smaller organizations dedicated to animal rescue and welfare that doesn’t involve euthanasia.

Ray fell in love with a pit bull, Boo, in her twenties. From there, she vowed only to own the breed so many  people are banning and shying away from.

“I’m committed the rest of my life to having only Pit Bulls. People are so ignorant, and they’ve outlawed them in so many communities and some states, that I just think it’s my mission in life to prove to people that there’s no such thing as an evil animal. There are only evil humans.”

The ad sponsored by the Physicians Committee for Responsible Medicine linking McDonald’s to heart disease by showing a dead man in a morgue with a hamburger in his hand has sparked a lot of discussion, particularly among those that may not feel vegetarianism is necessary for health or that the fast food giant alone isn’t responsible for the mass epidemic of health problems.

So says Rachael Ray, who recently chimed in her thoughts to Joy Behar on HLN. Ray has confidence that many people would walk right past the golden arches if they only had enough change in their pockets to purchase healthier options. Therefore, it’s not about just wiping McDonald’s off the planet, but giving people the resources to choose better.

“It’s our problem as a country to make good food more affordable and more accessible to everyone,” Ray tells Behar.

Hear the rest of Ray’s thoughts and her suggestions for taking strides for better health in the video of the interview below.

Who says vegetarians miss out on omega-3 fatty acids because the don’t eat fish?

Rachael Ray recently featured HIP snacks as the “Snack of the Day” on her show. HIP features a Chocolate HIP cookie, that is rich in vegetarian sources of omega-3s, along with nutrients such as calcium, magnesium, iron and anti-oxidants.

HIP Snacks, along with HIP World Foods, were originally created to fund Hip4Kids Inc., a non-profit program designed to teach kids about healthier eating. Founded a decade ago, Hip4Kids aimed to prevent childhood obesity and Type II diabetes.

The omega-3 in HIP cookies is obtained from Salvia Hispanica L., a chia grain that is also high in fiber.

If there were as many falafel trucks as there were ice cream trucks, every neighborhood where the Middle Eastern shop rolled around the corner would shut down!

Falafel is in its own class of plant protein–not soy, seitan or a manufactured veggie protein patty. The chickpea balls have the ability to make vegetarians and carnivores beg for seconds.

Rachael Ray featured vegetarian sloppy joes on her daytime television show, The Rachael Ray Show, today.

Mushrooms are one of the few vegetables that provide a “meaty” texture and feel in the mouth and because of this, many meat eaters are even satisfied when sharing a dish that contain the fungi with vegetarians.

Diced portobellos are smothered in a homemade tangy tomato sauce seasoned with onions, peppers and garlic before being placed between two rolls. Don’t forget to opt for a vegetarian friendly Worcestershire sauce without anchovies.

Rachael Ray joined a bi-partisan group on Thursday to help unveil changes to the Child Nutrition Act.

The bill proposes that more students have more access to school meals, including breakfasts, and would extend the umbrella for assistance for low-income students, making it easier to access meals without the hassles of paperwork that might otherwise deny them based on a small margin declaring them ineligible. It would also extend school lunch programs during the summer for certain programs like camps in rural areas.

The Physicians Committee for Responsible Medicine, said in a press release that although the program is a start, it doesn’t address the issue of high fat foods in school lunches or providing enough plant based options.
