Meatless Mouthful–Kathy Freston Defines Veganist

“A veganist is someone who looks closely at all of the implications of their food choices — to his or her own body, to the animals, and to the environment — and then chooses to lean in to a plant-based diet. The suffix “ist” means “one who does” or “one who studies,” so a veganist takes what he or she learns and puts it into action by eating things that grow on trees or in the ground. All of this said, the word is intended as a soft word, a forgiving word. It’s all about progress, not perfection.”

Kathy Freston, author of Veganist, on her gradual transition to plant-based eating. Is Freston trying to redefine the word “vegan” so it occasionally includes animal products or advocates “cheating?” Probably not. She’s simply trying to show people that vegan means adding different things before you subtract. And this might be a better way to ensure success with the diet. And if you slip in areas like diet or fashion, it doesn’t mean you’re a vegan failure. After all, it’s a word for foods, not people.

Arianna Huffington and Wendi Murdoch hosted a party in celebration of Kathy Freston‘s latest book Veganist: Lose Weight, Get Healthy, Change The World that included famous vegan and non-vegan celebrities like Nicole Kidman, Keith Urban and Moby.

Guests were treated to treats of vegan crab cakes, faux meat skewers and mushroom-wrapped dates stuffed with soy cheese.

Freston’s book has convinced at least one of her host to adopt a more plant-based lifestyle.

Two vegan authors are dominating the New York Times’ Best Seller List.

Kathy Freston‘s Veganist is #4 in the Hardcover Advice & Misc. category during its debut week on the list and Kris Carr‘s Crazy Sexy Diet is not far behind at #7 and has been on the list for 3 weeks.

Vegan books are taking over the world!

Kathy Freston "Veganist"

Kathy Freston made an appearance on “Good Morning America” and shared some of her favorite comfort meals cooked vegan style!

Mock versions of chicken dinners, pastas with meatballs and ice cream are good ways for people to make the transition to a vegan diet, Freston says.

“Take out eating one animal at a time and replace it with the vegan meal that looks like the traditional favorite food and just lean into it. You don’t have to make the change overnight but just gradually move toward vegan food.”

Freston tantalizes Robin Roberts‘ taste buds with vegan Chicken Parmesan, spaghetti bolognese, chicken nuggets and ice cream made from coconut and soy milk. With selections like these, it may be tempting to ditch the whole “gradual” movement and dive right in.

Seitan and soy chicken fingers every night anyone?

“It’s a complex issue, but to put it briefly: raising animals for food is the primary cause of: land degradation, air pollution, water shortage and climate change. If we care about the planet, then eating vegan is an excellent step we can all take.”

Kathy Freston, author of the hot-selling book, Veganist, who recently appeared on The Oprah Winfrey Show to talk about the lifestyle and help the Harpo Studios crew go vegan for a week.

A couple of years ago, Freston wrote an article that appeared in the Huffington Post on the effects going vegetarian part-time has on the environment. According to Environmental Defense, if every American skipped just one meal of chicken per week and substituted it with a vegetarian meal, it would save the equivalent amount of carbon dioxide as taking half a million cars off the road.

“The Oprah Winfrey Show” Vegan Episode (Video)

A good  portion of “The Oprah Winfrey Show” where Oprah‘s staff went vegan for a week is now posted online.

Scenes of Oprah’s staff eating vegan in the Harpo cafeteria, getting coached by Kathy Freston, the discussion with Michael Pollan and Lisa Ling‘s glimpse into a meat processing plant are all included.

Cargill, one of the largest producers of meat products, agreed to let the cameras behind the scenes when 20 other producers refused.

There was only one graphic part that was not allowed to be shown on camera, and that was stunning the cow before it was slaughtered. However, Ling’s reaction to the ordeal was caught on camera. And it does say much.
