Vegan chef Bryant Terry appeared on The Martha Stewart Show today and demonstrated his recipe for Spinach with Ginger and Chile.

The episode was meant to promote Terry’s mentor and local food proponent, Alice Waters‘ new book, In The Green Kitchen.

Part of the fun with trying new recipes is discovering an herb or spice you’ve never worked with fresh before.

Remember when you ditched the spice rack and headed for the produce section to check out those weird, finger looking plants called “ginger?”

Alice Waters–Expensive Meat Means Less Meat

Alice Waters is one of the Michael Pollans in the food world.

Not vegetarian, and maybe showing no intentions of going there, she does support eating less meat and using locally grown items to lessen our environmental impact.

One way to get people to eat less meat is to raise the price of it.

Organic, grass fed varieties of meat cost more, and if more people who are part time vegetarians choose to only buy this option, it may greatly reduce the number of animals being raised for food.

“I eat meat, but no meat that isn’t pastured is acceptable, and we probably need to eat a whole lot less.,” Waters told MNN. “But by choosing to eat only pasture-fed, that encourages you to eat differently: “If I can’t get real meat, I don’t want it.” And since it’s more expensive, you’re inclined to eat less.”

What’s your take on Water’s opinion?

Will promoting the consumption of only pasture fed or “ethically raised” meat effectively lessen the numbers of animals raised for food?

Would it be easier to get people to spend more money to only buy these types of meats or convince them eating no meat at all is a better option?

LA Times Festival Of Books Features Alicia Silverstone, Alice Waters

Alicia Silverstone discussion and signing of her new book 'The Kind Diet'

Two eco chefs and cookbook authors, Alicia Silverstone and Alice Waters, are scheduled to attend the Los Angeles Times Festival of Books on April 24 and 25.

The event is being promoted as one of the largest literary ones in the United States and will feature chefs from both the Food Network and Bravo’s Top Chef.

The cooking stage is free of charge and will be open from 11AM to 3:30PM both Saturday and Sunday.

Silverstone is expected to be interviewed by the LA Times at 3:30PM on Saturday and Waters is expected to speak on Sunday at 11AM on the UCLA campus.

Local and sustainable food champion Alice Waters has gathered 30 different chefs to contribute to her latest book, In The Green Kitchen: Techniques To Learn By Heart.

You’ll recognize some of the vegetarian contributors, such as Vegan Soul Kitchen author Bryant Terry, which may explain why Waters, although not vegetarian, has compiled a collection of recipes and techniques helpful to the mixed eating household or individual.

As Treehugger states in their Weekday Vegetarian Feature, “This is also a terrific book if you are eating less meat. There are recipes for meat and fish here, but there are many more recipes featuring beautiful produce, beans, eggs, breads and pastas.”

The theme for In The Green Kitchen is simplicity, both in recipes and technique, so there’ll be no need to stock items for a 30 ingredient dish.

Besides Terry, other contributing authors include Anna Lappé.

Jamie Oliver Opens New Dinner Show

Single digit temperatures and snowy days make winter one of the best seasons to stay inside and try new recipes.

The Daily Green is featuring creations by several celebrity chefs, including vegan chefs Tal Ronnen and Bryant Terry and local food advocate Alice Waters.

The best treats, however, are vegetarian recipes by non vegetarian chefs like Jamie Oliver.

Although a target of animal rights activists for serving meat in his restaurants, Oliver has been outspoken about knowing the source of your food and improving the quality of food in school lunches in the UK.

His Vegetable Jalfrezi makes for a nice dish to enjoy at home, or to include in the children’s lunchbox.

Spices of ginger, garlic and cilantro liven up garbanzo beans and combine with vegetables such as cabbage and tomatoes to serve over rice and top with yogurt.

As part of the Eat Well Thanksgiving series, the New York Times has featured vegetarian recipes from Slow Food and locavore Queen Alice Waters.

The Times has included a few recipes from Waters’ cookbook, The Art of Simple Food.

“Thanksgiving is my favorite holiday,” Waters said. “I always spend it with friends, and vegetarian or not, everyone feels comfortable at the table. I always think less is more and prefer simple side dishes.”

Alice isn’t kidding about simplicity.

The Roasted Butternut Squash, for example, only has 3 ingredients.

Julia Child Hated Organic Food ‘Till Alice Waters Made Her Warm And Fuzzy

Yesterday we learned that legendary chef Julia Child couldn’t understand why anyone would want to follow a vegetarian diet.

Now, we find out not only did Julia hate on tofu, she didn’t care too much for organic food either.

According to green gossip website, Ecorazzi.com, Meryl Streep, who plays Child in the movie Julie & Julia, recalled the time when she asked Julia what she thought of organic ingredients.

Child wrote Streep a pretty nasty letter saying she didn’t care for organics.

It was only later when locally grown, sustainable foods champ Alice Waters came along that the chef started to embrace the food.
