Rip Esselstyn was a guest on CBS This Morning to discuss the benefits of a vegan diet and his latest book, My Beef with Meat.

Many have heard of the firefighter’s famous story of turning his entire station vegan, insisting they eat what he calls “plant-strong.”

The author who described this transformation in The Engine 2 Diet discussed with hosts the benefits of plant-based eating on human health and the planet.

When he discusses issues like heart disease and cholesterol, Esselstyn insists he’s not trying to scare anyone. He simply wants to educate.

Chicago’s South Side Engine 18 station recently held a meatless celebration featuring Rip Esselstyn, author of The Engine 2 Diet who helped firemen at his station in Texas adopt a plant-based diet on the job.

Rahm encourages such a change and thinks it could cut health care costs in the future.

The shift towards a plant-based diet comes after a visit to the hospital for heart attack symptoms. O’Donnell O’Donnell learned her left anterior descending artery was 99-percent blocked. The comedian is also using this experience to speak out on the heart attack symptoms of women vs. men.

The best way to prevent and extinguish high blood pressure, heart disease and diabetes is through food. Rip Esselstyn, author of The Engine 2 Diet, was lucky enough to have a cardiologist father who had seen the benefits of how a plant-based diet revered heart disease in his patients. Rip Esselstyn has partnered with Whole Foods Market to guide customers in making the best choices for dinner, which consists of items that have roots in the ground, not an animal.

The author of the best selling book, “The Engine 2 Diet: The Texas Firefighter’s 28-Day Save-Your-Life Plan That Lowers Cholesterol and Burns Away the Pounds,” who turned his fire station veg explained to the Huffington Post that most people are “plant weak,” when they should be what he calls “Plant Strong.”

“I tell people, right now we have a country that is plant-weak. If you were to look at caloric pie of how Americans eat, close to 60 percent of America’s calories are coming from refined and processed foods. You know, the white stuff: the fried chips, the soda pop, fruit juices, doughnuts and cakes.”
