The lovely Lisa Edelstein is gracing the cover of Coco Eco Magazine. Inside, this longtime vegetarian shares her advice for transitioning into a meatless diet, what she feels are the most important green issues and more.

Edelstein must love the idea of Meatless Mondays, because she recommends going vegetarian for a day to help people get adjusted and acquainted.

“Slowly jumpstart your culinary journey with a once-a-week commitment by leaving the animal products out of your repertoire for a single day/three full meals.”

“View it as a fun experiment rather than as a sacrifice – you might just discover that the food addictions you once had for bad-body-munchies end up shifting over to edibles that actually make you feel revitalized (and are healthy, to boot).”

Lisa Edelstein credits growing up in a Kosher household for the ease in the transition from eating meat to becoming vegetarian.

“If you’re raised with a food restriction, it’s not that difficult to have another kind of food restriction,” she told Prevention, according to That’s Fit.

The House actress is featured in the June 2010 issue, which goes on sale May 4.

She said she was “never a big meat eater,” but once had a dream about eating chicken that turned into a sort of nightmare once the parts she was eating turned human.

“But in the dream, I understood that it was actually miniature human legs and arms. My brain was connecting muscle and bone to another animal. Once I had made that connection, it just wasn’t something I wanted to eat.”

Lisa loves cooking non human and non animal dishes in her kitchen that incorporate vegetables like broccoli, string beans and avocado.

One of her favorite dishes is lemongrass soup, something she says works similarly to chicken soup, as it makes you feel, “really good when you don’t feel well.”

Lisa Edelstein is normally what she calls a “cook-at-home person,” but when she does go out, there are few places in Los Angeles you can bet a slice of tempeh bacon on she’ll be dining at.

The vegetarian House actress shared her favorite spots with the LA Times, along with what she’s likely to order when there.

“Gingergrass on Glendale Boulevard — amazing Vietnamese food. It’s much more casual than Blair’s, but the food is delicious. I get the vegetarian pho. Inaka on La Brea and M Cafe on Melrose are also good for vegetarians. Inaka is macrobiotic Japanese, and it’s very healthful, clean food and extremely consistent. I’ve been going there for 20 years. M Cafe is a slightly more spicy and flavorful version of macrobiotic food.”

That’s a mouthful of great vegetarian friendly places to eat, but there’s more.

Glee Cheerleaders Exclusive Performance at Foxs Upfront Presentation

Lisa Edelstein has told us all about her vegan shoe problem in the past.

Although she sometimes wears leather shoes, the House actress and vegetarian says she tries to support vegan companies whenever possible.

“There are some wonderful emerging companies that have great vegan shoes and bags and I try to support them as much as possible.”

Edelstein, along with other celebrities like Jimmy Fallon, Laura Wright, and John Henson share their secrets for being green on Mother Nature Network.

I’m the crazy person that for the last 20 years has brought my own bags to the grocery store,” Edelstein said. “I use environmentally friendly cleaning supplies in my house, I use biodegradable doggie bags and I drive a hybrid. I do what I can. If everybody does what they can it will make an enormous difference.”

If you’re looking for a vegan shoe, it might surprise you to know they’re not as scarce as some realize. Even shops like Target will usually have a few pairs containing completely man-made material.

With well known designers like Elizabeth Olsen to a pocketbook and environmentally friendly Zoe and Zac brand at Payless Shoes, you’re guaranteed plenty of opportunities to have your style and ethics too.

Omar Epps In Same Veg House As Lisa Edelstein

Written by Vegetarian Star on Friday, January 16th, 2009 in Actors.

Yet another celebrity hiding behind his tempeh, Omar Epps, the actor who plays Dr. Eric Foreman on “House” follows a vegetarian diet.

How is it we are just now finding out about this? Must be because he hasn’t gotten naked for PETA yet.

But how incredible it is to know both he and fellow “House” cast mate Lisa Edelstein both keep their houses meat-free.

Treehugger.com has compiled a gallery of Vegetarian Men We Love: Macho Men Who Don’t Eat Meat, where you’ll find Omar, as well as other photos of deliciously meatless men such as Jared Leto, and fun facts like Forest Whitaker remaining vegetarian while putting on 50 pounds to play dictator Idi Amin in The Last King of Scotland.

Because there’s still a stereotype of vegetarianism and veganism being a “girlie” thing, it’s good to know the boys are getting proper respect.
