“If I’m home, it’s ‘Garbage Disposal Salad.’ It’s my most made meal that my mom taught me to do when I was in high school.” As the name states, there’s everything in there from greens, cucumbers and spinach to blueberries, grapes, black beans and cashews: “anything that gives it, for lack of a better word, a ‘meaty’ texture. So you don’t feel like you’re eating a salad.”

Kristen Bell is on the cover of Viva Magazine and has an online interview with the publication.

Kristen has been a vegetarian since age 11, and has toyed with veganism at some points in her life.

Growing up, she would only eat if her dog was sitting by her side.

Could that be why she couldn’t force herself to eat animals?

“[I] never liked the look, taste or smell of meat,” Kristen said. “My mom tried to disguise it but I just was not having any of it. When I discovered what vegetarianism was, I claimed to be one and my mom was very supportive.”

Kristen recognizes that going vegetarian doesn’t mean going on a cheese and mayo sandwich diet. You gotta work to eat healthy sometimes!

“A lot of vegetarians just eat bread and pasta and don’t realize that iron, zinc and magnesium need to be replaced. I take supplements but I also find that I have a very well- balanced diet.”

And this chick isn’t afraid of real food. She eats dessert three times a day!

“Yes, even after breakfast! I make chocolate-covered strawberries a lot because it’s a good halfway point. You’re getting fruit, which is great, but you’re also smothering them in chocolate.”

Kristen Bell Tofurky Thanksgiving

If you’ve taken the Tofurky from the freezer this morning to thaw, you’re in good company with Kristen Bell.

The actress says she loves the faux bird dinner that comes with cranberry apple dumplings, mushroom gravy, wild rice and whole wheat bread stuffing and “wishstix.”

“Tofurkey?… “It’s a faux turkey that my parents always made for me because I’ve always been a vegetarian. It’s great, you should try it!”

Of course, Thanksgiving dinner doesn’t have to be an imitation of what millions of other Americans are eating.

Remember your college days of eating pizza in the dorm when you didn’t go home for the holidays?

Kristen Bell recently did an interview with Women’s Health magazine where she revealed that although she went vegetarian at the age of 11 for animal rights, mom made sure she retained her healthy eating habits.

“I try to eat as many colors as possible. My mom taught me that when I was little. If you’re plate is colorful, you’re probably doing a good job.”

Kristen’s exercise routine consists of  lots of yoga, strength training, walking her dogs, and taking the stairs whenever possible.

“I try to eat more fresh foods than processed ones, and the grainiest bread possible.”

Maybe the Grain Council will recruit Kristen to be their next grain “it” girl.

We know not all vegetarians cook for their meat eating buddies, but some, like Kristen Bell do.

Last year Kelly Clarkson roasted bird with her family for Thanksgiving, even though she’s been vegetarian for more than year.  However, she found it so exhausting, she vowed never to do it again.

From her blog:

“so i’ve been in texas since ending the tour. i’ve been hanging with family during the holidays and i made my first turkey with my sister this year ….which is kind of hilarious seeing as how i haven’t eaten meat in over a year, but it was fun to make. and by fun, i mean our turkey was awesome and everything but i’ll never do it again. it was freakin’ exhausting!! i had to wake up at 5 in the morning, the night before we had to brine the dang thing, and oh my lord i’ll never do it again. my sister and i made the ENTIRE meal and i gotta be honest it gave me a whole new respect for housewives because it was just tiring!!”

Someone should whisper to Kelly that a Tofurky takes a lot less time to prepare. Just thaw, unwrap, do a little basting and bake for about an hour and a half. No brining and no wiping up the potential salmonella residue left behind.

And the housewives can rest and watch television all day, making the family think they’ve worked their butts off!

We already know that Kristen Bell doesn’t mind sharing company with omnivores. She doesn’t even mind sharing her crockpot with their food.

So it’s no surprise that she was seen out and about with friends at a seafood restaurant in New York, Flex Mussels.

Her friends ate way too much sea kitten, but Kristen helped herself to a helping a Flex fries.

Everyone in the group got to enjoy the same dessert-homemade donuts to go.

Wonder if Kristen thought about speaking up and going to a different restaurant with more vegetarian options? Looks like she got caught in a Patrick Stump steakhouse situation.

Or she could just love those Flex Fries.
