Chloe Coscarelli Comfort Foods Include Mac And Cheese (Video)

Chloe Coscarelli, vegan chef, author of Chloe’s Kitchen and 2010 winner of Cupcake Wars, is out to convert all the comfort food loving junkies to versions of the dishes that are more comforting to the arteries and the animals.

A guest on Yahoo Shine, Coscarelli demonstrated three of her favorite comfort foods, Guilt-Free Garlic Mashed Potatoes, Best Ever Baked Mac and Cheese and Mocha Almond Fudge Cake that’s almost as sweet as Chloe’s bubbly personality.

Although not a vegetarian, Zelyaeva tries to follow a raw diet as much as possible and takes to vegan smoothies like she takes to the runway.

She recently got together with some writers from New York Magazine‘s “The Cu”t for a mission to concoct a drink made from almond milk fit for a supermodel or a cubicle worker.

White House Kids State Dinner Winner BBQ Chickpea Burger Story

Michelle Obama invited kids from each of the 50 states and their families to the first ever kids White House State Dinner. The children were winners in the First Lady’s Healthy Lunch Contest, where they were encouraged to create recipes from whole foods, emphasizing fresh fruits and vegetables and grains.

One attendee and winner, 8-year-old Finwe Wiedenhoeft from Mineral Point, Wisconsin, has a terrific flexitarian story behind the family’s winning Barbecue Cheddar Chickpea Burger recipe.

Amanda Cohen‘s interview with the New York Daily News times perfectly with the release of her cookbook, Dirt Candy: A Cookbook: Flavor-Forward Food from the Upstart New York City Vegetarian Restaurant.

Cohen gave readers a preview of some of the recipes they’ll find in the cookbook bearing the same name as her New York vegetable restaurant like hush puppies with maple butter and kimchi doughnuts.

“I love cookbooks and have hundreds at home, but I wanted to make one that I would be so excited to buy, take home and read, and not just because it was from a certain restaurant,” Cohen said.
