Art Smith, who served as personal chef to Oprah, is known for his healthier twists on southern cuisine.

The celebrity chef used plant-based versions of his favorite meals to help him fight Type II diabetes and lose 120 pounds.

One of Smith’s more popular southern comfort meals with a vegan twist is his cassoulet.

Two former executives from McDonald’s have joined forces with celebrity chefs Art Smith and Tal Ronnen to create a menu for a new chain of healthy restaurants that will be very vegan-friendly, Lyfe Kitchen. The first Lyfe restaurant will open in Palo Alto, California this summer and the two hope to expand to 250 restaurants serving made to order cuisine like Panera Bread or Chipotle.

Faster food is the only vestige former McDonald’s President and Chief Operating Officer Mike Roberts and former communications boss Mike Donahue are bringing from their old establishment. Besides vegetarian and vegan options, there will be no fried food and every menu item will contain less than 600 calories.

No McHigh Fructose Corn Syrup, McButter or McCream is allowed either.

Today is the last Meatless Monday recipe before Thanksgiving and what better way to celebrate a holiday tradition than with a traditional meal of fried NOT-chicken!

Guaranteed to put KFC to shame, this vegan fried chicken doesn’t involve birds being scalded in hot water or their throats slit (a nice image to accompany while eating real chicken, though), but it does involve Gardein faux chicken fillets, Chick’n Scallopini, available from natural and veg-friendly stores like Whole Foods. This recipe if so perfectly put together, you could probably even substitute another vegetarian chicken if Gardein is no where to be found.

Chef Art Smith was personally invited to cook for the Dalai Lama this past weekend in Toronto at a VIP guest luncheon hosted by The Canadian Tibetan.

Chef Smith served Southern Fried Vegan Chicken with Local Greens and Apple Cobbler with Buttery Short Crust, Whipped Cream and Candied Spiced Pecans.

Art Smith, who’s worked as a chef for Oprah Winfrey and Jeb Bush, married his partner of 10 years, Jesus Salgueiro, on August 18th.

Much talk went on about Chelsea Clinton offering meat to her guests even though she was vegetarian and whether or not the couple should think solely of themselves during the reception. Thankfully, Art and Jesus remembered the vegetarians and offered vegan friendly protein wraps and vegan chocolate cupcakes.

Smith is the founder of the non-profit, Common Threads, which teaches children about other cultures through food. He’s also the owner of the Chicago restaurant TABLE 52, which doesn’t offer the greatest selection of vegetarian options, but sources food from organic farms regionally in the Midwest.
