Meatless Monday Recipe–Art Smith Vegan Cassoulet

Art Smith, who served as personal chef to Oprah, is known for his healthier twists on southern cuisine.
The celebrity chef used plant-based versions of his favorite meals to help him fight Type II diabetes and lose 120 pounds.
One of Smith’s more popular southern comfort meals with a vegan twist is his cassoulet.
This casserole that may usually feature ham or ground turkey sausage is enriched with black-eyed peas instead.
“As a chef living with type 2 diabetes, I know that managing the way you eat can be challenging,” said Smith. “That’s why I’ve started cooking up delicious, diabetes-friendly dishes that the whole family can enjoy. I want to show people that having type 2 diabetes doesn’t mean you have to make separate meals or feel alone at meal time.”
