Sudhir Kandula has made it to the top 3 finalists in the reality cooking show where one chef will be able to run his own restaurant invested by celebrity chefs Curtis Stone, Lorena Garcia and Bobby Flay, with several locations in key cities in the United States.

Kandula is the guy who wants to make vegetarian Indian food mainstream. And now there’s a pretty darn good chance he will.

It’s starting to sound as if America’s Next Great Restaurant may try to do the green thing, even if the vegetarian chef who’s a contestant during the debut season will be bashed repeatedly for trying progressive cooking.

Curtis Stone, one of the judges for the new reality TV cooking series, told MNN he tries to keep his kitchens as green as possible, buying seasonal, local and organic.
