“America’s Next Great Restaurant” Curtis Stone Cooks Green

It’s starting to sound as if America’s Next Great Restaurant may try to do the green thing, even if the vegetarian chef who’s a contestant during the debut season will be bashed repeatedly for trying progressive cooking.
Curtis Stone, one of the judges for the new reality TV cooking series, told MNN he tries to keep his kitchens as green as possible, buying seasonal, local and organic.
“I always cook with local and seasonal produce, organic where possible, and then recycling, composting, supporting local farmers. It’s super important.”
Stone admitted that buying good quality food isn’t always the easiest feat for someone on a budget, but said the best approach is to be “as green as you can afford to be.”
Eating less meat is an easy way to get greener. Ditto for choosing more humane egg and dairy products. Buying organic when it’s in season and freezing it for later ensures you can enjoy all kinds of produce year round. Or buy the dirtiest fruits and vegetables organic.
