Mark Bittman follows that old saying the breakfast is the most important vegan meal of the day.

During a recent interview with Take Two on 89.3 KPCC, Southern California’s Public Radio, Bittman gave a few suggestions on how anyone following his vegan before six flexitarian or completely vegan eating plan can fuel up for the first meal of the day.

“I like oatmeal with chopped vegetables and cilantro and scallions and soy sauce. I realize that’s not to everyone’s taste, but many people like savory breakfast. Smoothies, which I make with frozen fruit and silken tofu or soy milk or almond milk or oat milk or whatever. And fruit, I just eat it through the morning and it seems to do fine.”

“I was 57, which you know, happens to everyone who is lucky enough to live to be 57 and I was 40 pounds overweight, my cholesterol was 50 points higher than it should have been and my blood sugar was high. I had a conventional doctor who wanted to do things via surgery and drugs and then I went and saw this older guy, who’s not very conventional, but is very smart, who I’ve known for a long time and I said, “Here’s the numbers, what should I do?”

Mark Bittman visited the set of Today to discuss his popular flexitarian eating plan, “vegan before six,” as well as showcase a few of his favorite vegan recipes.

As you may have guessed from the name, “vegan before six,” is not about eliminating every animal product from your diet, but eating plant-based for every meal except dinner and snacks after that.

Mark Bittman already has a pretty flexible vegan eating plan.

Eat what you want (sensibly) at dinnertime, but every meal before 6:00 P.M. should be vegan.

Can there be any more wiggle room for the flexitarian not willing to give up all animal products?

During an interview on Huffington Post Live, Bittman reveals yes–if you’re willing to cheat.

“Yes, I put milk in my coffee in the morning,” Bittman said. “Real vegans don’t, but I’m not a real vegan….On strict days, [I eat] no dairy, no animal products at all, no processed food, no white food like white rice, pasta, bread, etc..”

The vegetarian and vegan movement is often associated with a younger crowd.

But as New York Times columnist and book author Mark Bittman explains to AARP, you can go vegan at any age.

Even if it’s just until dinnertime.

Of his self-created “vegan before six” program that only allows meat products for one meal a day, Bittman explained:

“I’m 63. It’s doable. You’re only changing your diet for two-thirds of the time. I mean, do you want to live a longer, higher quality life or not? Some people say, “I don’t care, I’m going to eat my cheeseburgers.” Those are not the people this book is addressed to. Obviously.”

Mark Bittman has been promoting his “vegan before six” eating plan–the one that allowed him to lose weight and lower his cholesterol levels by eating nothing with a face before dinner–for some time.
