Paltrow Says Sorry. Vegan Pancakes Will Make Up For It.

Ah, the old tradition of asking for forgiveness by offering a gift. So not long ago, Gwyneth Paltrow did a very, very naughty advertisement. Well, it wasn’t really naughty, but it did offend quite a few vegetarian and vegan people.

Unlike Leona Lewis who said FUR-get it, Paltrow posed in fur lined boots and bags for the clothing line Tod’s. Known for her macrobiotic and vegetarian diet, she angered PETA and was rumored to upset her fellow veg friends like Stella McCartney. Now it looks as if she is offering a gift of a recipe for vegan pancakes to make it up to all of us.

She put a website up, called Goop (which incidentally, is the descriptive word that might come to mind when you think of pancake batter). Goop is all about goop good food: restaurants, recipes, advice, etc.

“I’ve got a thing for pancakes. This combination of nutty buckwheat and sweet, sticky banana is just great. You could sprinkle chopped walnuts on the pancakes as they’re cooking for a full-on pancake-meets-banana bread experience. These happen to be vegan, but don’t taste like it.”

Hmff. We don’t know what she’s implying by “don’t taste like it.” If “vegan” had a taste, we’d want to buy bulk size flavorings of it. But it does sound like a really great recipe, plus lots of more boring healthy information such as “calcium, vitamins, iron, gluten-freeness,” and so forth. Hop On The Sweet Avocado Train: Jason Mraz’s Chocomole

There must be something about being a vegetarian and a star that makes you want to try weird food combinations. Or maybe it’s just being vegetarian and a music star.

First, there’s RZA and his veggie burger patty on waffles. Then there’s Chris Walla promoting his veggie sausage with peanut butter. Could it get any worse? Our latest meatless recipe comes from Jason Mraz, who turned to a raw food diet earlier in the spring of this year, which also helped his bandmate, Toca Rivera, shown on the right in the photo, eliminate his symptoms of diabetes.

“Chocomole,” is exactly what it sounds like: Guacamole-like avocado whip with chocolate flavoring. Now it could be that we are just sheltered little blogggers whose food palate is limited by beans and rice and Amy’s Tofu Pot Pies and chocolate guacamole is a happening thing in foodie culture. If chocolate guacamole is a huge part of culture in the region of [insert region we’ve offended] and we don’t know about it, apologies in advance.

Mraz has his own avocado farm with trees that are 25-30 years old and describes his kitchen as sometimes being plentiful of the species, with him washing, eating, and distributing to friends who stop by.

This “chocomole” contraption he describes as chocolate mousse.

“You will freak when you try this chocolate mousse,” Mraz said.

Freak indeed, but hopefully in a good way.

Fall Out Boy’s Andy Hurley’s Recipe For Soy Protein Shake

So Andy Hurley gave Rolling Stone the secrets to a great vegetarian protein shake. But it still might be kind of hard to steal this recipe as he’s kind of vague about the formula:

“About this much vanilla soy milk, up to here with chocolate soy milk, then a scoop of peanut butter, some liquid amino acids to complete the protein.”

Maybe hard to follow, but sure sounds like a winner!

Joanne Rose Bothered By Dietitians Encouraging Meat And Dairy

Joanne Rose is an Australian born actress that has appeared in “CSI: New York” and as a stand in for the movie Knocked Up.

She was heavily influenced by the late River Phoenix, who was also a vegetarian, in her decision to stop eating animal products and is not too keen on the advice some medical professionals give about healthy eating.

“It bothers me that there are dietitians out there who encourage people to eat meat and dairy,” she told Celebrities For Health. “They believe that eating red meat gives you the essential iron intake you need…You can get all the right vitamins and minerals from being a Vegan. You can also take vitamin supplements to enhance your dietary needs.”

Some of her favorite foods are rice balls, tofu burgers, and wheat-free vegan pizza. She was kind enough to share one of her favorite recipes for “Savory Sauce.” We haven’t tried it yet, but sure sounds like something to share at a future staff dinner.

Death Cab For Cutie Play Sydney

The October 2008 issue of Vegetarian Times features a short Q&A session with Death Cab For Cutie’s Chris Walla with writer Gabrielle Harradine. Check your mail, it’s probably there already. If you don’t subscribe, what the heck are you waiting for? Get your veggie butts to the grocery stands already!

Anyway, there is a site called Cooking With Rock Stars, which features, you guessed it, musicians and their favorite recipes. Chris Walla has his “Peanut Butter Veggie Sausage Toast,” recipe posted. In the interview with Harradine, he said:

“It sounds wrong, but it’s really good! Ideally, you use Lightlife Gimme Lean Sausage and Sourdough bread: Toast a slice of bread and spread peanut butter on it; then grill the sausage in your favorite oil, halve them lengthwise, salt to taste, and place them on the toasted bread.”

This sounds almost as bad as RZA’s veggie patty between waffles. But we have to trust Chris on this one. If anyone tries this out, please let us know!

A couple of days ago, we introduced you to Kevin Nealon’s Chickpea Tacos. Turns out, after examining that website more closely, there are several other celebrity favorite recipes that also looked tasty. So we decided to bring them all to you in case you were too hungry to bother clicking more to go to the site. Enjoy!

Emily Deschanel’s Seitan Piccata from The Millennium Cookbook – Extraordinary Vegetarian Cuisine,by Eric Tucker and John Westerdahl, Dessert Recipes by Sascha Weiss.

Serves 6

HERB CRUST:
1 1/2 cups all-purpose unbleached flour
1/3 cup polenta
1 teaspoon dried thyme
1 teaspoon dried basil
1 teaspoon dried oregano
1 teaspoon paprika
1/2 teaspoon ground pepper 
1 cup soy milk
2 teaspoons Dijon mustard
6 servings (1 1/2 pounds) marinated seitan, cut into medallions
1/4 cup canola oil

PICCATA SAUCE:
2 teaspoons minced garlic
6 paper-thin lemon slices
1/2 cup fresh lemon juice
2 cups dry white wine (you can use non-alcoholic wine)
1 tablespoon nutritional yeast
1 tablespoon capers, drained
1/2 teaspoon ground pepper
1/2 teaspoon sea salt
1 tablespoon cornstarch or arrowroot, dissolved in 3 tablespoons cold water
Thin lemon slices and minced fresh parsley or chives for garnish

DIRECTIONS:
In a shallow bowl, combine all the ingredients for the herb crust. In another shallow bowl, combine the soy milk and mustard. Dredge the seitan with the crust mixture, dip in the soy milk mixture, then dredge again in the crust mixture. Cook the seitan in a dry nonstick pan over medium-high heat until lightly brown, about 2 to 3 minutes per side. Keep warm in low oven.

To make the sauce: Wipe out the pan and place it over medium heat. Add the garlic and toast until lightly browned. Add the lemon slices, the remaining sauce ingredients. Boil until the volume is reduced by almost half. Stir in the cornstarch mixture and cook until thickened. Serve the hot sauce over seitan. Garnish with more lemon slices and parsley.

Alicia Silverstone actually has 2 more recipes over there, but since celebs have big egos anyway, we don’t want to make them even more grandiose, thus we’re only featuring 1 for each.

Peanut Butter Crispy Rice Treats
1 3/4 cups brown rice syrup
1 pinch sea salt
3/4 cup peanut butter or almond butter (all natural)
1 box brown rice crisps cereal
1/2 cup grain-sweetened chocolate chips (optional)

Heat rice syrup with a pinch of salt in a saucepan over low heat. When rice syrup liquefies, add peanut butter and stir until well combined and heated through.

Pour entire box of cereal into a large bowl. Pour rice syrup mixture on top. Use your hands to incorporate everything together (mix in grain-sweetened chocolate chips at this point, if using).

Press down into an 8″×8″ or 9″×13″ baking dish. Wet your fingers as your press down to keep them from sticking. Let cool for 1 hour before cutting into squares.

Persia White’s Fresh Fruit Salad and Black China Rice Bread

1  container Bio-K+ CL1285® Dairy-Free (a dairy free acidophilus that tastes like tangy yogurt)
1 organic mango (some stores sell fresh cut mango in the deli section)
1 organic kiwi
1/2 organic red or green apple
1 slice Food for Life Black China Rice Bread

Pour chilled Bio-K into a small bowl. Cut mango, kiwi, and apple into 1/2″ slices. Place fruit in bowl and lightly mix and serve.

Toast one slice of Black China Rice Bread. The bread is wheat free/dairy free yet it smells like a cake when toasted. For a different twist, spread a light layer of organic strawberry jam on it.
