Meatless Mouthful–Caldwell Esselstyn Won’t Touch “V” Word

“If you start to use the v-word, people get nervous. Somehow, there’s a feeling from years ago that vegans are strange. There are so many negative connotations. There’s so much more to talk about apart from a word. It’s about nutrition and improving your health.”
—Dr. Caldwell Essestyn, cardiologist and author of Prevent and Reverse Heart Disease, who saw a trend in the cholesterol levels of his patients who adopted a plant-based diet. Esselstyn recently attended a screening of Forks Over Knives, a film which examines the claim that major diseases that prematurely claim so many lives each year are caused by diet, particularly one heavy in animal products.
Esselstyn is a vegan, but told CNN’s Eatocracy the film’s creators tried to leave it out of the film as much as possible.
Because it’s not about the “V” word. It’s about the “P” word. Go plant power!
