Such meatless entrees in the “Please Everyone Vegetarian and Vegan Dishes” include Chilled Soba with Tofu and Sugar Snap Peas, Spiced Lentil Tacos with Chipotle Sour Cream, Roasted Eggplant Salad.

Lady Bird Johnson was the wife of former president Lyndon B. Johnson, and like many first ladies, left a legacy of her own instead of standing in her husband’s shadow.

An environmentalist, she was active in several beautification and preservation projects in the D.C. area, including planing tulips and daffodils that are still seen at the nation’s capitol, campaigning for the Highway Beautification Act of 1965 and pushing for hiking and biking trails.

Meet 107-year old Karam and his 100-year old wife Katari Chand.

They are listed in the Guinness Book of World Records as being married for 87 years, the longest any couple has been wed.

Together they have 8 children and 28 grandchildren and attribute both a long, happy marriage and a long life to a vegetarian diet.

Former White House chef Walter Scheib says both Chelsea Clinton and Hillary Clinton were big fans of his garlic hummus. Scheib had to keep this chickpea spread fresh in the kitchen at all times and often sent it with the Clintons on trips away from Pennsylvania Ave.
