The King of promoting a vegetarian lifestyle for Britain, the U.S. and the rest of the world, Paul McCartney, has compiled a list of his favorite recipes to help promote his campaign by enticing every meat eater’s taste buds,  the Meat Free Monday Cookbook.

From the publisher:

“Often, though, our vegetarian repertoire is limited, with the result that our enthusiasm to continue with a meat-free day wanes when we are confronted with yet again eating the same dish. With menus for each of the 52 weeks of the year – two main recipes, plus four other ideas for each meal of the day – The Meat Free Monday Cookbook addresses this problem and is aimed at everyone who cares about the environment, is happy to eat vegetarian one day a week, but needs inspiration and guidance to do so.”

Paul, along with daughters Stella and Mary, launched Meat Free Monday in the UK, a campaign similar to the U.S.’s Meatless Monday, but with more focus on reducing meat intake for environmental reasons. McCartney has often cited the UN study that found raising livestock for food creates more greenhouse gas emissions than all forms of transportation combined.

Your meat free day doesn’t have to happen on Monday. Try McCartney’s Super Vegetable Salad, which features savory cornmeal dusted tofu strips laid over a bed of vegetables like cherry tomatoes, broccoli and green beans.
