Co-author of the Skinny Bitch series and author of her own cookbook, Skinny Bitch: Ultimate, Everyday Cookbook, Kim Barnouin, will be signing copies of books and greeting visitors to the Kaeng Raeng Cleanse booth at the LA Expo West at the Anaheim Convention Center in Anaheim, California on Saturday, March 12, from 1-3 p.m.

The Natural Products Expo West is one of the largest, natural and organic products and trade shows in the nation, and featured over 3,000 exhibits in 2010.

A treat that Barnouin’s mother has made for 40 years, Jack’s Grandma’s Apple Pie has undergone a few transformations to suit the Skinny Bitch author’s egg and dairy-free dietary preferences.

Earth Balance vegan butter and Spectrum vegetable shortening are Kim’s preferred switches for the pie, but she was nice enough to give other vegan baking suggestions during her interview with EcoStiletto.

Curry Tofu Egg-Less Salad

The staples of a vegan egg salad are easy to get down. Tofu, some vegan mayonnaise and a spice for that yellow coloring eggs give, like turmeric or curry.

Kim Barnouin, who prefers Nasoya vegan mayonnaise, chose to put curry in this vegan egg salad recipe she created that’s found in her new cookbook, “Skinny Bitch: Ultimate Everyday Cookbook.” Curry, she notes on her blog, is known for its anti-inflammatory properties. This has been shown in both research and anecdotally. One doctored recalled that when his patients vacationed in India and ate the curry-rich dishes popular in the region, their arthritic pain decreased.

Kim Barnouin, co-author of the Skinny Bitch series who recently wrote her own cookbook, Skinny Bitch: Ultimate Everyday Cookbook, was a guest on CBS’ “The Early Show” as part of the show’s “Saturday Morning Chef on a Shoestring Challenge.”

Barnouin was there to show her favorite substitutes for animal products, which included almond butter and vegetables oils as well as explain the health benefits of a vegan diet and the controversy surrounding some suggested consequences of meat, such as early puberty in girls.

Her challenge was the make a 3-course meal with a budget of $40. She took the challenge by making an entire vegan meal of kale and white bean soup, polenta-crusted eggplant Parmesan, and chocolate cupcakes with peanut-butter frosting.

Kim Barnouin doesn’t think there can be too many cookbook authors in the kitchen.

During an interview with UK’s So Feminine, the co-author of Skinny Bitch and author of her recently released cookbook, Skinny Bitch: Ultimate Everyday Cookbook, said recipe developers and food writers should definitely pursue their passion of writing deliciously.

“When you find the thing that you are passionate about, go after it 100%. There will never be too many cookbook authors. I love cookbooks so much and I am always on the lookout for new ones. Finding your specific niche can help narrow down your book ideas and help you focus on creating your specific style.”

Fortunately for vegetarians, vegans and those looking to reduce animal products in their diets, cookbook trends have shown the market is welcoming this guidance with open arms.

In Skinny Bitch: Ultimate Everyday Cookbook, author Kim Barnouin, uses a chapter of her latest work to give a firm lecture on sustainable eating minus the animal rights component.

“This is not where I criticize factory farming for its inhumane and utter disdain for animal welfare,” Barnouin writes. “Skinny Bitch already did that. Actually, I’ve got a whole other bone to pick with the industry: our food system and its immense contributions to greenhouse gas emission and global warming.”
