Martha Stewart Italian Baked Eggplant With Seitan

Martha Stewart has tickled her vegetarian fans pink with her latest cookbook, Meatless: More Than 200 of the Very Best Vegetarian Recipes.

Stewart is no stranger to seitan, a simple high protein meat alternative made from gluten flour and a few basic seasonings.

She invited Twitter co-founder and vegan Biz Stone to her show to cook seitan bourguignon and now one of America’s most popular chefs has created her own dish: Italian Baked Eggplant with Seitan.

Beyond Meat Founder Ethan Brown

“Once, we had the horse-drawn carriage, and then we had the horseless carriage, and then we had the automobile. I’m firmly convinced we’re going to go from beef and chicken products that are animal in origin to those that are made with plants — and at some point in the future you’ll walk down the aisle of the supermarket and ask for beef and chicken, and like the automobile has no relationship to the horse, what you get will have nothing to do with animals.”

Ethan Brown, founder of Beyond Meat, a new meat analogue available at natural foods stores like Whole Foods. Some people, like Twitter co-founder Biz Stone, say the product is so close to meat it’s almost scary. Stone said of his experience: “My first reaction was, if I was given this in a restaurant, I’d get the waiter to come over and ask if he’d accidentally given us real chicken.”

“For people who are actually repulsed by meat, they’re not going to like this. The first reaction I had was, I know this is a meat analogue but if someone were to serve this to me in a restaurant I would have said ‘I think this is a mistake. There’s something about the mouth-feel, the fattiness. It feels fatty and muscly and like it’s not good for you when you’re chewing it. For a long-time vegan, it’s a little bit freaky.”

Twitter co-founders Biz Stone and Evan Williams are backing a company that specializes in meat analogues. The Obvious Corporation, founded by Stone and Williams, provides resources to a few select companies who’s mission it is passionate about.

Being a vegan, it was not a hard decision for Stone to put his name behind Beyond Meat.

Meatless Monday Recipe–Twitter Seitan Via Biz Stone

Biz stopped by to demonstrate making seitan for Martha’s special vegan episode, which was a hit among meat eaters and vegetarians.

Biz Stone And Martha Stewart Make Seitan Bourguignon

Biz Stone‘s segment on The Martha Stewart Show has been posted to Gawker.

“One of the things we like to do is we like to take real comfort food [and make it vegan]. And this particular food is like a stew that’s really great during a rainy day,” Biz said.

Biz revealed that when his wife Livia is cooking at home, he reads books to her while she’s at the stovetop.

“We have a bunch of classic books. We just finished Treasure Island. We have a lot of the Sherlock Holmes stories…That’s kind of like, my role in the kitchen.”

Using Westsoy brand of seitan, Biz and Martha walk through the steps of cooking seitan bourguignon. While Martha is stirring the seitan, Biz jokes, “I guess I should be reading to you.”

When Biz Stone wants pizza delivered, he doesn’t have to worry about ordering one of those weird, cheeseless ones with only sauce and vegetables.

Stone, who is scheduled to make seitan on Martha Stewart’s special vegan episode tomorrow, is lucky enough to live near Amici’s–an East Coast style pizzeria on the West Coast in California that offers vegan pizza topped with the popular Daiya vegan cheese delivered to his door.
