Meatless Monday Recipe–Carla Hall Last Supper Tarragon Peas

One of Carla Hall‘s favorite foods is peas.
The co-host of The Chew has a bit of advice when cooking with them.
Buy and use them fresh!
“Why waste my time thawing frozen peas?” Hall said in Deleware Online.
She must know what she’s talking about because her Last Supper Tarragon Peas are so good, legendary chef Jacques Pepin claims he could “die happy” after eating them.
Hey, Jacques, that “Last Supper” thing is just a joke.
Cooking with fresh instead of frozen peas has other benefits, Hall insists.
Frozen peas clump and don’t cook evenly when you throw them in a hot pan or pot.
If you do use frozen, she recommends thawing thoroughly before cooking.
But if you want to impress a culinary connoisseur like Pepin, go for fresh.
The only non-vegan item in the recipe is butter, which can easily be replaced with a vegan version.
Have these peas at your next (but hopefully not last) supper with the recipe from Delaware Online.
