Yotom Ottolenghi Talks Vegetarianism To “GQ”

Yotam Ottolenghi is definitely in style, as he’s devoted an entire cookbook to plant-based cooking.
GQ UK picked up on this and decided to sit with the chef and author for a one-on-one session where explained that most people don’t realize what they’re missing when they pass on cauliflower.
“They always have this image of cauliflower cheese – awful, sticky, creamy and rich. In fact this is the opposite,” he told the magazine.
No mushy, cheesy cauliflower never turned anyone vegetarian.
Not that he’s trying.
“I always say I don’t want to convert meat eaters to vegetarianism as I’m not one. The problem with vegetarianism for many years is that people kept trying to make meat substitutes, which is the worst thing you can do. For instance there is a dish in Jerusalem that is roasted butternut squash, roasted onions, tahini and za’atar. That one is completely satisfying for me as its got the roasting flavour of the butternut and there’s so much going on in terms of flavour that there is really no need for anything else. It doesn’t even have dairy – it’s vegan! Excuse the word….I’d probably have eggs next to it just to make sure…'”
