Meatless Monday Recipe–Mary McCartney “Food” Hummous, Avocado, Chilli Jam Sandwich

Mary McCartney has published a vegetarian cookbook filled with recipes inspired by her mother’s cooking and tales of food memories she formed in the famous McCartney household.
“Growing up in a vegetarian family and having Mum at the helm in the kitchen, encouraging us all to muck in, was the best education I could have asked for,” writes Mary at Food and Drink. “Over the years I have continued to cook as my mum did, experimenting with ingredients, flavours and textures.”
One of the recipes in Food is for a hummus sandwich with chilli jam.
Although there’s a sweet component to it, chilli jam isn’t necessarily something you’d put on buttered toast in the morning. A mixture of chillies, peppers, sugar and vinegar, the jam seems popular among chefs in the UK and can be either purchased or made homemade and canned.
Nigella Lawson has a version you can make at home and there is a company in the UK, The Chilli Jam Company, that offers products suitable for vegetarians and vegans.
Mary gives a bland hummus and bread dish a kick with a tablespoon of chilli jam and piles of fresh avocado, lettuce, a pinch of lemon juice and salt and pepper to taste.
