Memorial Day is one of those meaty holidays where you demand the carnivores cook something veggie far, far away from the meat on the grill. It’s nice of them to do that, but if you’re an extreme health veg diva, it isn’t enough to throw a handful of greasy, salty potato chips on your plate next to your oat and lentils burgers.

Can we get a nutritioius, veggie chip to complement that veggie burger?

To borrow a slogan from a past presidential campaign, “Yes, we can!”

Kale Chips

She recently found a recipe for Kale Chips on the website of one her Kind Life fans.

Vegan Pandamonium has instructions for making crispy, kale chips that are so simple, the omnivores have no excuse to add them to the list of things to do for “the annoying vegetarian coming over for the barbecue.”

Kale is one of those green, leafy vegetables that make an excellent source of calcium for vegans, as the body absorbs it better than your clothes unfortunately absorb the smell of smoked meat at the mixed eater barbecue.

Ingredients

  • 1 bushel of kale (fresh, not pre-cut)
  • 1 Tbsp olive oil
  • ½ tsp salt

Instructions:

  • Preheat oven to 350 degrees
  • Rinse and dry the kale well
  • Rip up the kale into bite-size pieces
  • In a large bowl, massage the olive oil and salt into the kale – you may want to add or use less salt depending on your taste
  • Spread the kale on a baking sheet so that none of the pieces are on top of each other
  • Bake for about 18 minutes until really crispy
