Yotam Ottolenghi Gives “Plenty” Of Reasons To Like Vegetables

Yotam Ottolenghi gave vegetarians and vegans “plenty” of reasons to dislike him when he decided to redefine vegetarian, saying it was okay to eat fish and there were “no hard core boundaries anymore.”
His latest cookbook, Plenty, doesn’t appear to be competing with Webster’s by changing the definition of vegetarian, and is filled with 120 recipes organized by vegetable.
Ottolenghi divides his book by Roots, Funky Onions, Mushrooms, Zucchini and Other Squashes, Peppers, Brassicas, the Mighty Eggplant, Tomatoes, Leaves, Green Things, Green Beans, Pulses, Grains, Pasta Polenta and Couscous, and Fruit With Cheese.
Whew! No tuna or lobster in there is a relief.
Authentic vegetarian dishes combined with beautiful, glossy photos make the collection worth picking up and may even convert some meat eaters to spending more of their flex time on plants during the week.
“Looks like Meatless Mondays might be extending,” said Village Voice‘s “Fork In The Road.”
Sample recipes in Plenty include leek fritters, lentils with broiled eggplant and quinoa and grilled sourdough salad.
