“Clean Start” Author Explains How Pregnant Vegan Celebrities Keep Healthy

How do pregnant celebrities that follow a vegan diet like Natalie Portman and Alicia Silverstone feed their bump?
It should come from plants, according to Terry Walters, author of “Clean Start” and “Clean Food,” a book about eating seasonally. Walters is a food educator and on the board of directors at one of the largest urban organic farms in the United States.
“[Dark leafy greens] might not have as much calcium or minerals as a glass of milk,” said Terry, “But we are better able to access more minerals.”

In an article at Celebuzz, Terry notes that pregnant vegs should consume lots of legumes for protein and grains for folic acid, a B-complex vitamin that prevents birth defects.
“[Vegan celebrities] find that following a vegan diet is cleaner for them and can reduce a lot of risks,” Terry added. “The best source of vitamins and minerals are from plants.”
