Emeril Lagasse On Eating Seasonal Fruits And Vegetables (Video)

Emeril Lagasse recorded a video praising the benefits of eating fresh, seasonal and local.
His latest cookbook, Farm To Fork: Cooking Local, Cooking Fresh, emphasizes living this way, with Emeril recommending supporting the Farmers Markets and more.
Emeril not only believes we should eat seasonal for greener living, but goes as far to say that foods will probably taste better then too.
“Who wants to eat a raspberry in January? Who wants to eat a tomato in December?…Eat what’s in season.”
Don’t know about Emeril, but some produce like raspberries and tomatoes are crave-worthy year round. But if you don’t want to break the cardinal seasonal rule, stock up when produce is in season and freeze them for later use.
Obviously, this won’t work for everything, but raspberries, for example, have an estimated freezer life of 4-6 months. Other vegetables can go for 8-12 months.
